Hi,
I got this from another site and then modified it to make it better (IMHO).
Riced Cauliflower
Roast some cauliflower florets until tender then lightly process in a food processor until it looks like rice. Roasting the cauliflower allows some of the moisture to evaporate, making a more stable crust.
Bacon
Dice some bacon and onions and sautée until the onions are soft. Near the end of the cooking time, add some minced garlic. I used 4 slice of bacon, half a medium onion and two cloves of garlic.
Crust
Mix one cup of the riced cauliflower, the bacon and onion mixture, one cup of mozzarella cheese and 1 egg. Add oregano and any other seasonings you like. Spread the mixture into a circle on a baking sheet. Bake for 12 - 15 minutes at 450 degrees until set and starting to brown. I flipped mine over after 12 minutes and cooked for about 5 more minutes.
Pizza
Remove from oven, cover with sauce, toppings and cheese of your choice. Return it back to the oven and broil until the cheese is melted, bubbly and starting to brown.
This pizza was awesome, you can pick it up in your hands and eat it like a normal pizza, it tastes great, there is no way you can tell it has cauliflower in the crust. I was very surprised at how filling it was.

That sounds really good, Val. I may actually try that one. I'm not sure how much cauliflower one would use, but according to Fitday 1 cup of cauliflower has less than 2g net carbs. Not bad at all. _________________ Eat, Drink and Be Merry, For Tomorrow We'll Die |

Hi,
If you check out the site the I posted, you will also fine recipes for how to make lasagna and break sticks using the same cauliflower "dough" recipe. If you make it, let me know how it turns out.

Cleo has been coming up with some really god stuff lately. I never did get the hang of the oopsie roll though. my looked horible and tasted worse!
