This isn't exactly an original recipe, but it's just the way I make it.
***
1 lb. frozen cauliflower
1/2 stick unsalted butter, softened (plus more for topping-optional)
1/4 c. green onions, chopped
2 oz. cream cheese, softened
1 cup cheddar cheese, grated (plus more for topping-optional)
5 slices bacon, cooked and crumbled (about 1/4 cup bacon bits)
dash sea salt
1/4 t. pepper
1/4 t. garlic powder
2-4 T. whipping cream (optional)

boil cauliflower in large pot until it breaks apart to the touch. Drain water. Place in mixing bowl. While still steaming hot, mix in cheddar cheese, room-temperature butter and room-temperature cream cheese. If mixture becomes too sticky or difficult to stir, add in whipping cream one tablespoon at a time. Stir in salt pepper and garlic. Add in half of green onions and bacon. Top each portion with additional cheddar, butter, green onions and bacon.
