I was thinking about getting a deep fryer, and using tallow or lard (not the stuff that is hydrogenated and full of chemicals) to fry stuff in.
Anyone know if animal oils heated that hot are bad for us? I sure liked the hot wings I fried in bacon fat I made.

I think all non-animal fats are extremely dangerous to put in one's body. If y0u are wanting to deep fry, animal fats have a much higher smoke point than vegetable oils. Remember, unhealthy free radicals are formed when any oil is heated above it's smoke point. Tallow and lamb fat have an even higher smoke point than lard. Lard is less saturated and softer, but, I use only lard for all my cooking, like frying eggs or making omelets. Lard and butter are the only fats/oils I will use, but, if y0u want to do a lot of deep fat frying, I'd suggest y0u render some beef fat, which y0u can get for free at most supermarket meat counters. Tallow may also be the least tainting of the taste of the food y0u are frying. Thanks Dean, I thought it would be ok but honestly this is the first time i have deep fat fried anything in years so I just wasn't sure. Fried chicken here I come. Egg dipped shrimp....egg dipped cube steak.... I think I can get a fryer really cheap..will look tomorrow.
I always have a jar of tallow in my fridge that I render myself..I get free fat from my meat man. I tried eating some olive oil last month, it tasted horrid to me..I haven't had any vegetable oil in months except for that one instance, and I spit it out. I keep reading about how bad it is for me, and I don't miss it at all. I still use mayo and olive oil but I've been thinking about giving both up. I've started saving my bacon grease for cooking.
What do you guys usually use to lube up your pan for cooking steak? I use a cast iron pan and it definitely needs some lube. The other thing I worry about is, when using oil first, when I add my butter it doesn't burn. Is this also the case with grease/fat?
I'll be watching to see how your experiments work. I have a deep fryer at home but it's full of Canola oil for hubby's fries, so I don't use it.
They sell small ones pretty cheap at Walmart. |

I use tallow or bacon fat to fry everything, except my eggs..I use my compound butter for that. And yes, if you add tallow to butter it raises the smoking point. I will buy a fryer at a local place..

Dean, I looked..nothing..strange huh? I'm also not sure i want something like that used..you never know what kind of strange experiments and solvents people put in stuff that sits in their garage.

True. The veggie/seed oils alone would be bad enough.
So, what are y0u planning on deep frying? Shrimp?
I hope you post some recipes. I might have to get one of these fryers myself.

I did know that. I love reading the personal ads late at night when I can't sleep..they make me laugh.
I DO have to come up with creative ways to pay my mortgage...hmm..nahhhhhh. We used to have a motel here called the "beaver motel"..it was next to the "notell motel"..hourly rates..
Anyway..back to deep fryers..I have been looking at the Frydaddy..I would like a frybaby but no one seems to stock them anymore, and the daddy only uses a quart of oil, they list for about $25, and get very good reviews. Chicken wings, chicken thighs, shrimp, fish...meatballs? Anything you can dip in egg and fry...I am sure I will come up with all sorts of things. I bet you can deep fry bacon wrapped scallops!! Dean..will y0u be my pimp? I need someone to watch out for me...
So I just went on a bike ride in the rain....and I got me a FryDaddy!!! I got the simplest model...no temp control..nothin fancy...you just drain and strain the fat when your done and store it in the frig. It's only a quart so no big deal. I got a whole chicken, some scallops, and some shrimp at the store..and i am thawing bacon. I can't play with it today because I still have part of a HUGE roast I need to finish....but I will fry something tomorrow I promise. I fried stuff today....All I had was bacon fat, I need tallow. Bacon fat has too low a smoke point and stuff got a bit dark, but it was still tasty. I made fried chicken and bacon wrapped shrimp. I do wish the FryDaddy had a temp control on it, that might have helped. But when I make tallow or get clean lard..that will help.
