WARNING! These are EXTREMELY addicting! So, only fry what you want to eat, cuz you will eat them until they're gone!

I was in Costco the other day, and was sampling all the crap they have at those sample booths. I swear you could live off the amount of food you can consume from all these different booths. Anyway, I approached a booth where it appeared they were serving tortellini. They were golden brown fried tortellini. I though, what the hell, I'm consuming carbs like there's no tomorrow. And, they tasted fantastic. I was truly amazed to find out that this was not pasta. It was cheese! Shock

Queso Blanco ("white cheese") is what they were frying (in some PAM spray crap). The Hispanic woman who was frying it said she normally uses lard to fry it in. I used tallow. And let me warn you. Only fry what you are gonna eat at once, cuz once you pop one of these golden nuggets into your mouth, you won't be able to stop. You WILL eat the whole lot.

Just chunk up this cheese in small flat chunks. Heat tallow or lard in a pan, then on medium heat drop the chunks of cheese into the pan, and keep an eye on them. Turn them when they get golden brown on one side, then take them out when they get that way on the other side. I'm sure these cheese chunks would go great with a nice glass of wine.

Oh wow, these sound delicious! Yup

Damn, I've never heard of this cheese...wonder if we can get it here in Australia?? Confused
Is it a soft or hard cheese? Sheep, cow or goat milk? I guess it must hold its shape, yes?
Is is similar in taste/texture to something else that I could maybe substitute if I can't find Queso Blanco?

It is a soft cheese, but still holds it's shape. It's from Mexico. If you have any markets that sell Mexican foods, you could find it there. It fries up very nicely in tallow, and probably even better in lard. That is what is used a lot in real Mexican cooking. Lard. We have so many people from Mexico in this city. There are so many authentic restaurants and grocery stores. Pork is really big. The meat market I go to has many Hispanic customers. I can get pork belly and pig brains and even pig feet and other such things there. It's wonderful. They sell lots of pig fat so people can render their own lard. I'm gonna be doing that real soon.

Yes, I've got some markets and specialty cheese stores near me...cool, I can go hunting for some! Wink
I can't wait to try these!!

Oh man, I so envy all those pork goodies you can get your hands on!!
Hmm...maybe I need to try some of the Asian butcher shops around town -perhaps they won't be so gob-smacked when I start requesting big chunks of fat... LOL
I've seen chicken's feet amongst some of the goodies on offer at some of these butchers, so you never know.

Cheese and red wine were definitley made for each other. The tannins in the wine, and the fat in the cheese balance each other perfectly. Wine

Hey Dave! That's what I was thinking of when I asked if it was similar to anything else!! Yum!! I'm Greek and so I grew up on those cheeses Yup
If anyone's considering trying Saganaki, the cheeses used are most commonly:
Kasseri
Halloumi
Kefalograviera
Kefalotiri

Kasseri and Halloumi are softer and less salty than Kefalograviera.
Kefalotiri is the firmest and saltiest. My favourite is Kefalograviera!

...speaking of Vegans...no offence intended, I know everyone has a perfect right to follow their beliefs, but, well, I went to a party a few nights ago and I was standing around with a some people, a few of whom made comments on how, errmm, "svelte" I was and "what did I eat?", etc., and the topic then turned into diet and nutrition...
Good Lord, the stuff that people were spouting nearly made my eyes pop out of my head! Shock
One woman, full of pomposity and self-importance, preached about how nature shows us what humans should eat by providing clues like, for example, when you slice a tomato in half vertically, the cross-section looks like the chambers of the heart, and it's been proven that tomatoes are good for the heart...and, walnuts look like a brain and it's been proven that walnuts are good for the brain...!!! Another started spouting Bible verses!!... Sad ... eerr, actually, I had a bit of fun with that one...once she'd finished gloating about how she just knew she'd live to be 100 by eating only what the bible said, I couldn't help but gently remind her that the bible also very firmly said words to the effect of 'eat what your brother eats, and do not offend your brother or cause your brother to sin by refusing to eat or rejecting as unclean whatever food it is he puts before you'. Devil
Anyway, the vegan in the group made me feel so sad. She was actually the least self-righteous of them all, and a rather nice person. She said that she just morally couldn't bring herself to eat animal products because she loved animals too much and since she could never kill one she didn't think she should eat them...Absolutely clueless about reality, I know, but the saddest thing was this woman was only 30 years old and she looked just awful! She was very overweight, especially around her mid-section, her face was riddled with pimples, her skin pasty, her hair was thin, lank and dull and her teeth were blackish at the gums as if the gums were dying. She even acknowledged that her teeth were loose and that the bottom ones felt like they were going to fall out. She went to the dentist regularly but just couldn't accept that it might be her 15 years of being a vegan that was causing all these problems!! Roll Eyes

You could laugh at vegan foolishness, but not if they are basically dying slowly of malnutrition! Sad

I'm late to the party, but... they had this frying cheese at the super duper huge walmarts. That was the only place I found it a couple of years ago. I haven't looked for it since. I think it says "frying cheese" on the package. :)

Queso Blanco ("white cheese") is what is used for frying. We have such a huge Hispanic population here that it is in all the stores. It's used in lots of Mexican dishes.
