I formulated this while I was trying to use up some ingredients. The amounts are an approximation.

1 lb. salmon fillet
1 T. maple extract (I used artificial)
1/4 C. sf caramel syrup
1 T. cinnamon
1 stick butter, divided
5 slices bacon (thick-cut or pepper bacon works best)
dash sea salt
dash black pepper

Heat oven to 400 F.
Place salmon in buttered baking pan.
Mix together syrup, cinnamon and maple extract. Pour half of the mixture over the salmon. Make sure fish is well coated.
Top salmon with a few pats of butter.
Place salmon in the oven; time varies according to the thickness of the fillet, but check at about 30 minutes for the average piece.
When salmon has about 10 more minutes of cooking time, pile bacon on a microwave-safe plate. Cook for 7 minutes. Do not drain grease.
Once salmon is fully cooked, place on top of the bacon. Pour on remaining syrup mixture. Add a few pats of butter, sea salt and pepper if desired.

This was a great combination of sweet and salty. The maple pairs really well with the salmon.
