I had 4 jars of homemade chicken broth that had to be used and a chicken that is almost done being picked over by my SO (which means making more broth - so I need my jars!). so i decided I would make some of this  Heart

this is a great soup.. and while it's cooking it reminds me of my grandmother's kitchen! sunday dinners at grandma's.. one of my favorite memories!

Ingredients

6 cups (48 fl oz) homemade chicken broth

2 eggs beaten - if you want to drink this, dont add the eggs (unless you dont mind chewing some haha)

1/4 cup (1 oz) freshly grated Parmesan or Romano cheese (optional)

fresh parsley

nutmeg (pumpkin pie spice will do)

garlic to taste (i use a clove)

salt to taste - if your stock has salt in it you wont need to



Directions

Bring the broth to a boil, then reduce to a simmer. add spices.

In a bowl, stir the cheese into the eggs.

While stirring the broth, drizzle in the egg mixture, then add the parsley.

Simmer 3 minutes more, then serve immediately.

Serves 6

the other day i took a bowl of frozen chicken stock with me to work.. I just threw some salt and pumpkin pie spice on top and heated it up for lunch.. it was great and tasted alot like this recipe  Heart
