Can also be made with a whole chicken
Get a large soup pot and add equal parts of chicken broth and water....enough to cover the turkey carcass or whole chicken if you are using that instead. Put on high heat and let it get to a rolling boil then turn the heat down to low and let simmer for a couple of hours. Add more water and chicken broth as needed to keep it from getting dry.
Then turn off the heat and remove turkey carcass (or chicken) and set this aside to cool a little. Make sure you get all the bones out of the pot.
When the carcass or chicken has cooled remove the meat from the bones and put that back into the pot.
If I am using a turkey carcass I add a ziploc baggie full of a half pound of cooked turkey meat to the pot.
If I am using a whole chicken, I put the meat back into the pot but I eat the skin as I am demeating the chicken.
Then put the pot back on low heat and get it simmering. Add one (just one!) shredded carrot and a chopped up stalk of celery and some garlic. Lots of garlic, freshly ground black pepper and some dill for flavour. A bit of basil if I have it and a pinch of whatever other herbs and spices I like.
If I have them I will also add a half an onion....finely chopped and cook that until the veggies are pretty much mush. If I need more turkey (when using the carcass) I will add another baggie of it from the freezer while I cook the veggies, adding more water and broth if needed.
Serve hot in a big bowl.

Just one. It takes me the better part of a day to make this.
