Another Danish ;-)

Hello everyone,

I am joining you from Denmark, home of, I am sorry, Danish pastry, but also famously exporting bacon and Lurpak butter. A wash, maybe. Maybe not.

I came here by way of, well, let's see... In 2007 I read and reviewed Gary Taubes' GCBC and got very interested in the ideas. Earlier I had been very interested in nutrition, but always finding faults with the different regimes. A major example of these I found in Fit for Life by the Diamonds where they renounce eggs on the grounds that it ruins if you break it onto a sun heated garden walk! A couple of wackos, to be sure.

Taubes got me going and the going was good. I had always loved steak and butter and eggs and bacon and fried chicken and ribs and so on. I quickly found the Eades' protein power site and have since been an avid and very amused reader of especially Dr. Mike's posts.

Further foraging (sorry) led me to sites like Art De Vany's, Mark Sisson's and many others and then one day (maybe five months ago) I found a thread where your Dean had 'salvaged' the famous The Bear postings from a lowcarber forum. An accomplished googler, I found the original thread and read it through - it took a week of evenings, but boy was it exciting.

I won't call my self a The Bear follower by any means. His achievement is tremendous though and a lot could be said for giving up vegetation completely or maybe from time to time. It's just that berries and melons and nuts and grapes (especially of the tramped-upon and fermented variety) are so yummy and, again, most likely (and in some ancient form, I know) a recurring part of our ancient ancestors' diet. I do partake of these as well as onions, broccoli, greens, tomatoes, garlic, chillies and other spices, normally. However, for the next almost three weeks (I am now on Day 3, I know, impressive stuff) I have committed to 100 percent carnivorous fare with only garlic, olive oil and spices added in minute quantities.

The reason is that I really want to experience this WOE and what it will do to me. I have read Stefansson's account as well as the Bellevue study, I have read about Schwatka's expedition and the Masai and the Inuits and (my personal heroes) the prairie indians. I have also learned that the earlier Scandinavian expeditions in the Arctic made good use of pemmikan bought locally. Fat is good, I believe it.

Seeing that your Dean had salvaged that thread and noticing that he himself did heavily participate in the discussion I decided to look further for him and then you lot came into view.

I have lurked her a few months and grown accustomed to your style, banter etc. I must say, as others have said, that the bus seems like a really nice and supportive place to be. I look forward to posting here and joining the various discussions.

On a more practical note, I have a question for you guys. It's about cartilage, tendons and the like. When chewing on a juicy, untrimmed steak that stuff invariably gather in my mouth as unliquifiable, rubbery lumps. What do you do? Swallow them in the knowledge that the HCl in the stomach will disolve them? Spit them out? I ask because on a fast I did years ago I also did an enema regime. And many of these tendons (sorry about the graphic language here), strings of cartilage and the like turned up in the muck (maybe this was the result of an ill-advised mixed diet, I don't know).

PS The reason I am only committing to the end August (for now) is that then my two daughters have their birthdays. I am doing my best to feed them (and my wife) in a Paleo manner, but these festive occassions still call for cake in our family and I am not going to be a teetotaller at such a time. Better suffer the consequences and get back on the wagon.

The meat I buy usually does not have much in the way of tendons, cartilage, etc.  But whatever is there........I always eat it all.  Yup

Just wanted to say that I am now on Day 9 of my ZC. I measured my fasting BG this morning and it came out at 88. I am fascinated to experience that my body is making adequate glucose from the fat or protein that I am ingesting. I knew about it, of course, but the personal experience is powerful.

And sorry for my maybe too lengthy intro. I will make a shorter and sweeter one when I start a journal  Wink

Bud, if you stick with this way of eating, you will experience many powerful things.  Your health and general well-being will improve in many ways.  It's one thing to read about these things, but when you experience it yourself, it's amazing.  As you know from reading Taubes, most of what we have been taught is just plain wrong.

Not everyone here just eats meat..I nibble on berries and a few nuts and veggies as well..That is great thing about the Bus..it supports all sorts of experiments..including Kool-Aid.. Grin

Welcome.  It's not the zerocarb nazi camp so eat whatever you want. Just observe how your body reacts.
