Beef with porcini mushrooms & bean side dish

Another carb friendly one from the SMH Good Living

50g dried porcini mushrooms
400g beef fillet
1 garlic clove. sliced
Thyme and black pepper. to taste
8 slices pancetta
Soak mushrooms until they swell and then chop; reserve water. Preheat oven to 200C. In the meantime, brown beef in a pan. Remove and reserve juices in the pan. Add sliced garlic to pan and allow to soften. Add mushrooms. Add plenty of chopped thyme and pepper.
Add 3 tbsp of the mushroom water to pan, and reduce. Lay overlapping pancetta slices in a baking dish. Coat beef in the mushroom mix and wrap in the pancetta. Roast for 30 minutes, remove from oven and rest for to minutes. Serve with roast vegetables and beans.

Beans with mustard and vinegar

Fry green beans with capers until they start to go soft'- but not too soft. Mix with teaspoon of French mustard and a good vinegar; Add-pepper to taste.
