carbohydrates suck!~~~Chelsea's bus ride

Just opening up a journal here to jot down my thoughts, meals, etc....and stay on the bus!  Let's see..this morning I ate some leftover egg stuff I baked (eggs, cheese, smoked sausage, sprinkled with a little bit of Italian seasoning) and drank some diet pepsi.  I'm going to try reducing my soda habit this year, but I'm going to get past three days of meat, eggs, and cheese first.  I'm so carbed up from the holidays still, that this is going to be tough.  I'm going to try bumping up my fat this time also.

I know what you mean about the diet pepsis. I was hooked on them until about a month ago when I just stopped drinking them.  They were starting to hurt my stomach each time I drank one so I quit for that reason.
I don't miss them.

Thanks, I know this is going to be hard, but the alternative (going back over 200lbs again) is a lot scarier.  I actually tried to give up everything--processed carbs, diet soda, and salt all at once.  I felt so crappy, that I decided to do carbs first, then work on cutting out diet soda and reducing sodium later.
Still felt a little hungry, so I ate a chicken breast with some ranch dressing.  I glanced at the label on my dressing.  It read more like a science experiment than actual food.  I think I might have to get some buttermilk and make my own.

sugar/starch are my triggers and i just have to treat them like a drug, (not the kool aid kind, since that's not addictive), you know what i mean. i was a purist when vegetarian so never got into the soda thing. still, it can be hard and i must be ever vigilant. those kind of carbs are something i will never go back to and don't even miss them. when something turns on that feeling/craving, i just have to remember that it's addiction trying to overpower. it's like being in a marvel comic; the villain and super hero duking it out!

Not only can you make your own ranch dressing with buttermilk, you can make your own buttermilk. Once you have that, you can even make your own sour cream. It's way easy. Let me know if you're interested in the recipe/method.

That is interesting.  I'd be interested in the method for making one's own buttermilk and sour cream.  I think I'm going to dust off some of my old kitchen equipment and start making more of my own food.  I've got an old ronco food dehydrator buried in my house somewhere.  I think I'll dig it out and start making my own jerky and beef sticks.  I read the label on a slim jim today and wondered why corn syrup was in it.  Longer shelf life maybe?  It's shocking to me that some of the stuff I eat really doesn't seem to be actual food.  

I slid back into a bad habit today...when I got home from work I drank three glasses of red wine and had two squares of dark chocolate.  I think I ate the chocolate just because it was there, so I'm asking my husband to take it all to work with him in the morning.  Might try to palm off the wine on someone else too.

Otherwise, I finished the day pretty well.  I've got pork chops roasting that I'll eat with a little bit of green salad.  I had some fried pork skins as a snack earlier and one coke zero(which is good, since I usually used to drink 2-3 while working).

I think I'm really starting to like this bus Happy

Food so far.....1 and 1/2 chicken strips, handful of pork skins, a slim jim, 2 string cheeses, handful of pepperoni, 1 diet pepsi and lots of homemade unsweetened iced tea

I seem to graze a lot.  Maybe I should start cooking myself a real breakfast in the mornings.  Next trip to the grocery store I'm going to pick up some bacon and sausage.  Lunch I usually don't eat anyway, because when I'm going from place to place working it's hard to find time to sit and eat.  Most days I eat something when I get home at 4:30 and have dinner later on in the evening.

Grr....was doing well until I started drinking that damn wine again.  Anyone in PA want some crappy box wine??  I ate some leftover porkchops and lettuce salad(good)  but I got "late nite munchies" and ate some sugar/creamy/pastry mess left over from our holiday party.  Washed that down with some doritos and chips.  I think it's going to take me a few false starts before I really get going.
With that said, it's time to hit the grocery store and load up on meat, cheese, and cream.  I'm thinking of experimenting with some nice decadent cream sauces in my meals to prevent boredom from setting in.

And Chelsea, here's rootin' for you to get off the fabricated foods. They have stuff in 'em that makes cravings, you know. That's how they hypnotize your body into calling out for more, more, more.

Hooray for homemade unsweetened tea! Here's my husband's method for making it. (Sweeteners optional.) How do you do yours? RTD (ready-to-drink) = JABS (just another big scam)!

The buttermilk and sour cream instructions are very interesting.  I'll have to give them a try, thanks!
I've come to the conclusion that weaning myself off of processed foods is going to be a long process.  I'm trying to make a permanent lifestyle change here, and that's going to take a while.  It's been close to 30 years I've been consuming all this stuff, so a switch to a better way will take me a while.

Oh, and when I do iced tea, I just take a few tea bags of earl grey or green or whatever variety I feel like that day and make an extra strong batch of hot tea, then once it's done steeping I pour it into a pitcher with some cold water and refrigerate it.  Green tea does tend to turn bitter if it's over-steeped, though.  Sometimes if I'm feeling lazy I get the instant stuff that's just plain dehydrated tea without any sweetener or flavor added.  Funny, it seems to be getting harder and harder to find.  I guess most consumers like the sugar and flavor loaded variety.

In the beginning you may feel starving as your body is screaming out for sugar, eat as much meat, eggs and butter as you can. It's not always and easy transition, been there done that too many times. You can and will get through this.

things were going well.  I had a few ounces of london broil and a handful of macadamias at lunchtime, then in the early evening my resolve weakened.

*taking deep breath and trying not to beat self up too much*
5oz of rye chips
3oz fried onions
1 coke zero
5 bottles of beer  Shock
spicy ground beef meatballs (homemade) without sauce or breadcrumbs with a homemade sour cream dip
at least I did NOT pick up that bag of skittles I was considering.....because I knew I'd have to write it down.  Forcing myself to look at what I'm eating in a day is eye opening.
tomorrow is another day.

Chelsea-  I know it can be rough.  One step at a time, and you will make progress.  The important thing is to just keep moving forward, and don't be to hard on yourself.    I know it is hard for me to have tempting things in the house...so I have had to banish some things.  It is like they call my name.... LOL

sunday:  breakfast was a small piece of london broil and an ounce of cheddar cheese.  Lunch was some turtle soup a good friend brought over with three glasses of wine.  in the middle of the afternoon I had two coke zeros and a handful of macadamia nuts.  dinner was four pieces of fried ravioli and three chicken strips, washed down by three pints of beer.  We were out at a bar with some friends.   That situation seems to be where my resolve is weakest.  Everyone's having a good time, the food and beer just look so tempting....

Most bars have chicken wings don't they, I guess it depends on where you are. I can usually resort to chicken wings in most restaurants and bars.

Most places I like to go have chicken wings, but sadly this one did not.  It's not a place I usually frequent anyway, so I'll likely not be back there anytime soon.
Breakfast was leftover meatballs and an ounce of cheese, didn't really eat lunch today, had a snack consisting of 2oz of cashews and a coke zero, then a slim jim later on.  Dinner was leftover turtle soup and london broil, with two glasses of wine, and a third glass an hour later.  I think I did better today!  sloooowly, but surely....

breakfast was a few ounces of cheese and a few nuts.  I ate a few leftover salad croutons in the back of the pantry.  I believe I have completely rid my house of crappy snack food now!  Lunch was a little more cheese and two bratwursts.  Dinner was some ground beef.  I was craving something sweet so I whipped up some heavy cream with my mixer and added a dash of sugarfree syrup.  I drank some wine but I honestly lost track of how much.  No soda today. Cool

Damn...fell off the wagon.  Time to get back up and keep going.  Breakfast was crap, but I got on my exercise bike for 20 minutes and did a 20 minute arm workout with 5lb weights.  I'm thinking of alternating arms and abs each day.  I have digital cable which comes with about 2 dozen free workout programs.

Chelsea-  Falling off the wagon sure is a pain in the backside, huh?  LOL   We have all been there.  Success isn't in not falling, but in getting back up every time that you do.  I hope it starts getting easier for you.
