Carleen's RamblingsHi everyone! I'm Carleen, also known as CountryBelle on a few other boards...
I have been eating low-carb intermittently since Dec. 2006, and last August, I began doing my own version of zero carb. I eat mostly meat, and some eggs, cheese and cream. Since August I've lost 23 lbs.
For me, this journey into zero carb is really all about weight loss. That being said, I believe it is a healthful way to eat--I simply am not yet convinced it's the only healthful WOE. I do hope to add some carbs (esp. veggies) back in once I lose the weight.
I am joining the How Low Can You Go challenge for January. I am aiming to keep my daily carbs for January well under 5. My best friend is coming to visit Feb. 11, and I want to be VISIBLY thinner by then!
Starting tomorrow, I will be focusing more on meat (I stocked my fridge and freezer today!), and limiting the dairy and eggs, and cutting back on the decaf (been drinking 4-5 mugs a day, need to cut back to 1-2 for now)
I also need to learn wait for real hunger!

Hi Carleen,
You and I have similar goals. I lost 100 lbs (mainly on KK and Atkins) but have been stalled for about six months now. I am hoping that ZC will allow me to lose the last 40 lbs. I am considering adding back in some carbs (eggs, cream, cheese and some veggies) at some time but am also leaving the door open to ZC as a lifestyle change. I will make that decision when I feel it is right for me.
It is nice to have someone else on the same journey as me. How much more do you want to lose? Congrats on the 23 lbs, that is amazing.

This morning the scale was up by 2 lbs! I'm going to attribute that to the extra carbs on Tues. and Wed., or else to hormones and TOM, which is just beginning...
Had my 2 cups of coffee black this morning, and I fried up two chicken leg quarters for breakfast--with all the fatty juices. I couldn't even finish them! It's amazing how much less food I want when the carbs aren't speaking!
15 carbs yesterday (Thurs). Hoping to keep them under 5 today!

Val, my goal is to lose another 45 lbs. That will bring me to 135, which is what I weighed in my early 20s. I will fine-tune my ultimate goal when I get closer to it.
WOW! 100 pounds is amazing!!!! You definitely have what it takes to get to your goal.... You've come so far already! So how much more are you looking at?

I had a good day yesterday. I'm down 0.8 lb. this morning, to 182.6

1 thin slice onion

Ground beef
Cheese, monterey, 1 oz.
Coffee, 1 T. cream
I didn't exactly hit my goal to be meat, coffee and water yesterday, but I sure am getting closer.

Your menu looks good. And you're losing so I guess I am confused about what goal you didn't meet?
Your menu is basically zero carb. Do the 5 carbs come from the onion slice?

Hi Carleen,
WTG on the loss! That slice of onion sounds really good with the beef and egg yolk! It is a great way to change the flavour a bit from plain ground beef. I will have to try that sometime. You are doing a wonderful job! Limiting to 5 carbs or fewer is tough. Once January is over, I am considering moving my limit from 0 to 5 to see if I keep losing. I am only staying at 0 now to get past a plateau that I have been stuck at for over half a year. If you can lose at 5 g a day, that is great!

I track on Fitday, and it computes even fractional carbs from cream, coffee and so on. Four of the carbs were from 4 (8 oz) decafs, and 1 from the onion. The T. of cream and cheese would've been a fraction of a carb...
Yeah, it is bascially zero carb, but 5 carbs is what Fitday spits out.
About missing my goal, I am trying to limit coffee and dairy, so while I didn't do bad yesterday, my goal is MOST days to keep the decaf to 2 cups, and no dairy...
The ground beef was very tasty with the egg yolk and onion. I ate it raw. How scary is that?! I have always LOVED raw hamburger/meatloaf and have always secretly picked at it when I made meatloaf. I have never had any ill effects from it on all of my 40+ years. Perhaps I'm living dangerously...

Carleen, that's where I'm at, too. I'm gonna slowly add lots of things back. Starting with eggs and a little cheese in omelets, and maybe even some shrooms. I'm gonna monitor things very closely, though.

Hi Carleen. You are doing really great girl!!! Congrats on being down about a lb!!! I steak tar tar but I have to have that seasoning in it! I doubt seriously the little bit of onion you had makes a difference in the grand scheme of things!!!

Had a couple of good days again. This morning I was down again--a little less than a pound!
I am really off chicken right now. I warmed a leg left over from the other night, and just could not bring myself to eat any! So for now, it's pork and eggs... Beef is just too expensive here--or maybe I am just too cheap.
Carbs for Sunday: 47
Ate 3 bites of caramel at lunch. Then we were invited to some friends' home for supper. I ended up eating half a sloppy joe, and some veggies and dip in order to be polite. Everything else served was much more carby. Sigh.
Carbs for Monday: 10
The carbs came from dill pickles, coffee, and mozzarella cheese
Looking keep improving my carb counts!

You can do it girl!
For me the social eating is the biggest anxiety promoter right now! In fact I flat told my sister this past Saturday that we would join them but after lunch so I didn't have to deal with the questions and looks about why I was only eating hamburger!

Carleen- I can relate to the tough social situation. There is only one other person I know in my little town who does low carb, much less VLC/ or carnivore. I hate to stand out like a sore thumb, so I have often felt like I should take part in the social eating. It is hard to go against the flow. Hang in there, and don't be too hard on yourself for it.
I find that I have to tap into my inner rebel to stay strong.

LOL, Heather about tapping into the inner rebel. I do have an independent streak, and react to any sense I get of someone trying to manipulate or control me! I will do what I will do...
Good day yesterday. And I was down 0.4 lbs this morning (180.2). Maybe tomorrow I will break into the 170s.
