Chicken Fried SteakLow Carb Chicken Fried Steak
One 5 to 8 ounce cube steak
1 cup pork rind crumbs (just smash up a bunch in a plastic bag with a rolling pin or whirl rinds in your food processor)
1 egg
Beat the egg in a shallow, wide bowl.
Put the pork rind crumbs in another shallow, wide bowl. At this point, I sometimes add spices - like parsley, onion or garlic powder, salt, pepper, and mix it all up.
Start heating a pan and when it gets warm, put in 3-4 tablespoons of your favorite cooking fat (tallow, coconut oil, etc.)
Dip both sides of the steak in the beaten egg. I let it 'soak' for a few moments on each side.
Then dip both sides of the steak in the pork rind crumbs. Make sure your steak is well-coated in pork rind crumbs.
Put the steak in the pan and fry on each side for about 4-5 minutes. I decided I wanted fried eggs with my steak, so I started them in their own pan at the same time I put the steak in the oil.
I served mine with the fried eggs and some sour cream to dip bites of steak in, since I was too lazy to make some LC gravy to go with it.
Smelled and tasted like the REAL thing. Of course, I haven't had the real thing in 18 months, so what do I know anymore?
I loved it - felt like I was eating a 'normie' food meal. And it was completely carnivorous. With the fried eggs, about 2 carbs for the whole meal.
