Cooking Temp/SpeedIs it better to cook meat at a low temp for a longer period like in a croak pot, low temp oven or low temp grill, or is it better to cook at high temps for less time especially when grilling meat?

there are plenty of peop who say long and slow. but for things like steak and burgers, if you sear/grill over high heat quickly, you get the benefit of a raw interior.

There are two different considerations...
1) Flavor
2) Health
There is often concern about high heats creating carcinogens. I worry more about #1 :p

A nice high heat seared rare steak is good for both.
It tastes great and for the time that it keeps me happy I'm less inclined to cause harm to those around me that keep pissing me off.
