Crockpot Carnitasthis is a recipe from another forum, the poster's name was oakdryad (just trying to give credit here without linking to that forum).
this looks incredibly tasty! I bought a boneless loin roast.. but I may go back and buy a shoulder (they are so cheap and I can save the bone for stock ) ... I will make this tomorrow or sunday.

1 crockpot
1 boneless pork shoulder roast. You can use a boned one if you want.
2 tbsp juniper berries (supposedly you can use gin as a replacement or caraway seeds.. I dont have any of these so Ill leave this out)
1 tbsp thyme
1 bay leaf
1/2 cup white wine (I bought cooking wine.. cooking wine tends to be salty but I think it will be fine)
I leave the netting on the roast because it makes it easier to get out of the pot in one piece.
Cook on LOW for about 8 hours. Take out the meat, remove the net, and shred it into a baking dish. Season with fresh black pepper and ancho chile powder (or any other that you fancy). Strain some of the rendered lard/juice from the crockpot over the shredded meat and then put into a 375 degree oven for about 30 min. You want the meat to get a bit brown and crispy, but not to dry out.
Serve as you like. I like it with a little shredded cheese, sour cream and sliced green onions, either in a bowl or rolled up in lettuce leaves. |

had this today.. man it was delicious! i used coriander seeds in place of juniper berries. awesome with cheese and sour cream on top!

Just wanted to let you know that I tried this last night and it was very good...I did not bake it after taking it out of the crock but instead cut it into small (about 2inch) pieces and put them in a hot skillet just to sear the outside edges. Worked out very well as it kept the juices all trapped inside .
