elk meatseems like every guy in my area hunts. businesses run on a skeleton crew when the season opens. i have had plenty of venison but never elk and according to my electrician, it is the best meat there is...tender, flavorful, etc. anyway, i have a homeless guy who does some work for me and the other day he said his sil was giving him some elk from last year so as to empty the freezer for the current season. i offered to trade him some of my cow....well, this evening i breifly seered my first taste of elk. it is very lean so i used a combo of CO and butter and it is truly delicious. it is sliced rather thinly so i had to stand over it to get rare.. oh, my. this is probably all i'll ever get so probably won't share w my dog.

I've never had elk, but it sounds good. BTW, happy belated birthday, Jem.

I've had elk quite a few times over the years but because it is so lean it is way better on the rare/raw side. Otherwise it's the consistency of a rubber boot/car tire.
