Fat good, Carbs bad...Hallelujah!Well, I think its time to start keeping track of eating! I've been doing lots of reading lately as well as discussing my new WOE with family and friends.
It's funny how they all have the same objections to what I'm doing;
"All that fat is going to clog your arteries!"
"But, doctors say you should eat mostly grains and vegetables!"
and my favorite:
"What, you think you are smarter than all the doctors out there?!"
Hehe, I just smile.
I began shifting away from carbs almost a month ago. About a week ago, I began to really limit my carb intake. Currently I'm hovering around 20grams per day, mostly because I'm still eating vegetables.
Today I ate:
Breakfast: NADA. I worked late last night and I woke up kinda late today, too late for B-fast.
Lunch (1pm): Spoonful of coconut oil, tsp. of cod liver oil and a glass of water. Not hungry yet.
Dinner (6pm): 3/4Lbs of 80/20 ground beef, fried with a chunk of beef fat, cooked medium rare. Topped with thai chili sauce.
Green beans, mushrooms and eggplant fried with bacon, coconut oil and butter seasoned with garlic and curry powder.
It was really good!
Some positive effects of eating this way:
--I've lost 7 lbs in the last 3 weeks.
--I have way more energy. Normally, after a typical carb filled meal, I wanted nothing more than to take a nap.
--My mood has improved. Not that I was depressed before, but now I just feel happy all the time. I also feel less stressed out.
--My blood pressure is slowly coming down. A month ago I was around 130-145 / 80-85. Now it's around 120-130 / 70-85 and dropping.
--I've also started exercising. For the last 5 years I was leading a VERY sedentary life, smoking pot and cigarettes and ZERO exercise.
I'm 6'1 and my weight was all the way up to 235lbs.
--Now I weigh 216 and dropping.
I gave up the cannabis 5 months ago mainly because I was smoking WAyyyyy too much and my wife and I want to have kids. It was homegrown, so needless to say, it was DA BOMB!
So there we go, what more can I say? I'm on the road to a better existence! Any advice from the bus riders will be greatly appreciated!

Well about an hour after eating the meal I described above, I went to the bathroom and had diarrhea. It was mostly liquid with a few small blobs thrown in. I went again an hour after that and more liquid came out.
I think I overdid the fat today. I'm new to this and I'm assuming my body still is not used to such high fat intake.
Did you veterans ever have this problem when you first started eating this way? I don't feel sick or anything and my stomach does not hurt. Weird

I had been doing Atkins before I went to this WOE, so it was not a drastic change. But no, no problems for me.
You're probably right. Too much fat too fast. Your body is just not used to it.

Hi Jeff, this is the first time I've ever changed my diet. I'm 30 and For the last 29 years I've been eating High carb, you know, the typical USA diet.
I did a ton of research and just decided to jump into this. This way of eating just makes sense and I feel great. I am beginning to understand that this is quite possibly the way humans are meant to eat.
Funny thing is, I've always eaten rich foods....cream, steak (rare) cheese, but I messed it all up with the ungodly amounts of bread, pasta and sugars I also ate. But even with all that food, I had no energy. Now, I'm amazed by how high my energy levels are, even though I'm eating less. I'm also not hungry all day.
I'm a skeptic at heart, but I have a good feeling about this. Time will tell.
On a side note, I can't get enough of the hard science behind the carnivore WOE. It seems all I've been doing on the web for the last month is reading this forum and doing research. I never would have thought this stuff could be interesting! Live and learn....

Hey Dean, I just want to say that your journal is one of the most interesting threads I've ever read in a forum. The up's and down's, especially when you went on that donut binge, such drama! I felt like I was going through that with you, I could almost feel your pain!

You are not alone with the GI issues you are having. Totally normal. Expect it for some time. Then, things will even out.

I'll echo what Dean said, sounds like you're on the right track, and yes, the GI issues are normal, especially with taking spoonfuls of coconut oil and cod liver oil. Don't know much about cod liver oil but coconut oil really seems to have that effect, kinda cleans you out, even on as little as 1 Tbs per day. Carb feeding bacteria are starting to die off and you're probably moving toward a better gut flora balance. All good stuff but a little unpleasant in the interim.
Love the positive effects you're already experiencing!
Guess that does in fact then make you "smarter than all the doctors out there"

Welcome to carnivore-land.
I've been VLC (very low carb) for about 3 week now although I've eaten lots of raw meat in my life so carnivore won't be a hard transition. I do experience loose stools, constipation, and fatigue. I'm expecting all of that to pass (pun intended)
The benefits have been greater, by far, than the challenges. I don't get gas, or bloating, my eczema is clearing, I'm much less hungry than before, I'm losing bodyfat ...

Went to a sports bar with my wife and our neighbors. I never realized how many of the dishes have some form of bread in them. All the appetizers were breaded. Sandwiches...out of the question. Ended up having a chicken salad with extra blue cheese, and a vodka with seltzer. My wife and neighbors had pattymelts with fries.....and beer.
Needles to say I was hungry when I got home and fried myself the last of the ground beef (about a 1/2lb) with leftover green beans from yesterday. Much better. I'm getting into the habit of frying meat with a chunk of beef fat. Once the fat reduces a bit, I eat the chunk....delicious. To think I used to throw the fat away, what was I thinking?! The green beans were awesome, mainly because of all the butter and bacon I cooked them in
I have a bunch of new york steaks in the freezer so that's what I'll be eating for the next few days.
BTW, I did not feel the need to eat breakfast or lunch today. Just had my usual tsp of coconut oil and cod liver oil in the morning, thats it.
The only supplements I take every day are 500mg of calcium citrate (vit C) and 200mg of COQ10.
Today is my last day of cigarettes too. I've just had enough and feel like a hypocrite.

Thanks Mina & Jeff. Now if there was some way I could convince my wife to hop on Da Bus with me....I guess I'll lead by example. At least she's supportive of what I'm doing.
Funny story: a week ago I made myself some steak tartare. When my wife saw me eating it, she freaked out! She actually got really mad at me. I still have'nt figured out why since she gave no explanation for her reaction.

Dinner today was.....3/4lb ground beef and Vegetables
Fry Bacon, Garlic and Onions in Butter
Fry Beef Fat in separate pan
Add Green Beans and Mushrooms to Bacon, Garlic & Onions, add some curry powder and a few tbsp. of coconut milk
Fry Ground beef. I seasoned the beef with pepper and worcestershire sauce
Remove browned beef fat and eat
Serve up and enjoy! Don't forget to pour fat drippings on burger and lick your plate.

In my ideal world, people would serve those as nibbles at a party instead of chips and dips, and you could buy them from street corner vendors instead of hot dogs or fruit! Can you imagine...serve them up like popcorn -and there would be all sorts to choose from; chicken crispies, pork crispies...drool...
...oh, and I'm glad I'm not the only one who licks the plate!

Hey everyone, well everything is going great, eating about 15g of carbs per day for the last couple days. I went to GNC to get some whey protein powder and would you believe all the brands they sold had artificial sweeteners and flavors? I told the guy at the counter "I want a pure whey powder, nothing else" well the best they could do was some chocolate flavored stuff with sucralose. Oh well, maybe another time. I've never taken protein supplements, but I began weightlifting last week and figured it couldn't hurt to try some. What do you guys think about protein powders? Yay or Nay? Should I just eat some more beef instead?
Speaking of beef, I've been eating chicken for the last two days and boy does it not compare. First of all I have to eat alot more to feel satisfied and a few hours later I'm hungry again. Granted, I'm not getting as much fat with it as I would with beef. On the other hand, after eating a pound of rare 80/20 ground beef (fried with extra fat) I'm full ALL DAY. Well, I'm learning as I go.
I've been cooking my beef less and less. I've never liked beef that is more than medium rare, it just changes the flavor and texture for the worse IMO. I really want to eventually eat my meats as close to raw as I can stand. I really only care for the outside to be cooked. I love a crispy outside with a bloody inside. I BBQ'd at my parents a couple days ago and my dad did not eat the beef because it was too rare. His piece was actually "medium" but he just couldnt eat it. My in-laws are the same, it's gotta be well done...at least! If they would just give the rare stuff a chance, oh well.
Found this video. The guy's a vegan or vegetarian or something but anyway, he makes some good points about eating food raw. Hey, at least he doesn't eat carbs.

Even Bear cautioned about overdoing protein, and I personally don't think it's good to do too much, and believe it is really unnecessary, anyway. But, all that aside, where is this guy getting all the things that animal fat will give you? How can this be a healthy diet? Raw vegans are skinny as shit. I've seen plenty. They are emaciated. I don't know how they can feel good. This guy was close to being a fruitarian. The horror stories I've heard about the long term health problems with that! I guess this guy was a true fruitarian/vegetarian.

Yeah, seriously! I think the "good feeling" they get is purely mental. They con themselves into thinking they feel good. I don't see how eating nothing but plants can make one happy. Honestly the only reason I still eat vegetables is because I'm still fighting with the whole "vegetables are healthy" thing. I'm scared of letting go. I'm almost there though.

When I did raw vegan and lots of juicing once upon a time I found that when I did fruit juice fasts for several days I felt "good" because I was spacey. I was VERY ungrounded. Now, with no carbs, I feel good AND grounded.

Another thing we have in common is that both our families are from South America, yours from Argentina, mine from Uruguay. I was born in Montevideo and we immigrated to the US in 1968.
I wouldn't do protein powder. I weight lift and don't seem to need extra protein beyond what I get in meat.

I agree with Sol.
1. the artificial sweetener is horrible for cravings and overeating.
2. the whey is a dairy product which can also cause problems.
You're probably better off eating extra meat if you're concerned about getting more protein. It's pure and natural with no "issues."

My mom went to her HMO cardiologist for some tests. She mentioned my ultra-low carb intake and the Doc said my WOE is "very dangerous because the brain needs glucose and my diet has almost zero". My mom was really concerned and asked me to start eating carbs again because of what the Dr. said.
I then explained to my mother that her Dr. clearly is not qualified to give nutritional advice. I also explained to her the various ways the body can synthesize glucose from protein as well as letting her borrow my copy of Mr Taubes book and a few studies I've printed out from PubMed.
I've always been a "do it yourself" kind of person. I like coming to conclusions on my own, based on my (hopefully) unbiased research. It's hard for me to see intelligent people take one persons opinion (like a Dr.) as gospel.
When will people realize that most doctors are not researchers? They simply regurgitate what they learned in school.

I find it amazing that doctors can be so misinformed. And I'm sure this is not an isolated case. You'd likely get similar advice from most doctors.

Exactly! How ignorant of some people to believe that carbs are "essential".
Our ancestors did just fine with little to no carbohydrate intake. This is one of the reasons that I say most medical doctors don't know shit about nutrition.
Like you say Dean, "Fat is where it's at" It's just too perfect! Sometimes I wish someone would step up and attempt to prove that statement wrong.

Today was duck day!
Lightly seasoned with salt & pepper, right before going in the oven. Some green onions and carrots cuz I'm still an addict.
This was so delicious and fatty.
I also broiled some beef ribs for tomorrow.

Looks great, Alex! The one time I made duck, I was surprised at how little meat there was. Maybe I just had a bad duck. It was yummy and fatty, though.

Yeah Jeff, not much meat on it, compared to a chicken at least. It's also a little tougher to chew, but more flavorful than chicken. Best of all, the protein to fat ratio is AWESOME! Very very fatty.

Actually, muscovy duck is quite a lean duck, compared to other species. I remember eating only muscovy (raw) for 3 days in a row and experienced "rabbit starvation" to the letter. Pekin duck is much fattier.
At least, that was my experience.

I cooked a dish my brother taught me called "Sunday Chicken" I made mashed cauliflower as a side to suck up all the juice (fat).
Ingredients:
Sunday Chicken
15 chicken thighs
1 stick of butter
2 apples
1 package of mushrooms
1 white onion
1 cup of heavy cream
Lots of curry powder, the more the better
Mashed Cauliflower
2 whole cauliflowers
1/2 stick of butter
1/4 cup of cream
seasoning to taste
Sautee diced apples, diced onion and sliced mushrooms in butter and curry for around 15 minutes. Then, add cream and sautee for another 5 minutes
Put chicken thighs in a baking pan and season with whatever you like. I used Lawry's seasoning salt. Chicken thighs work best for this dish because they are fatty. Don't remove skin.
Pour sautee over chicken and put in 350 degrees oven for 1 1/2 hours.
Served up, sorry about the presentation, my wife could not resist digging in before I could take the pic!
This is enough to feed 4-5 hungry people.

Hi Alex, sorry about this question...but I am wondering what you feel like after those cooked meals? In other words "what does it feel like digesting"?
You might say "normal" like other people always say...perhaps it's what we are used to?
Do you eat the burnt parts too?
I go swimming and ride...so I notice a lot - and yes I am supprised at what others "normaly" digest.
Please this is no offense - you do go to a lot of trouble - I am just interested in how people get on with digesting food AND life.

Well, I don't feel anything when the food is digesting. For me, the only digestive "issue" I have from time to time is diarrhea, which tends to happen when I drink lots of water with my meal. My theory is that drinking fluids while you eat ends up diluting your stomach acids and turns your stomach contents into a type of "soup". This soup ends up making its way to the intestines where it quickly moves through and ends up as diarrhea. I don't know if this is accurate but from my experience, if I drink lots of water with a meal, I'll be going to the bathroom 20-30 minutes after I'm done eating.

Yes, I do.
I can't say I've ever had any digestive problems. Even when I used to eat lots of carbs, My only issue was sporadic diarrhea. No nausea or stomach pain.
Honestly, the only difference i've noticed when I eat raw meat compared to cooked meat, is that raw meat gives me an "energy rush" soon after I eat it. I don't get this effect with cooked meat unless it is very fatty. Cooked ground beef tends to give me a rush too. Then again, I eat all my meat, except chicken, very rare. The only beef that I like raw is skirt steak seasoned with lemon and salt or ground beef tartare.

Argentine style BBQ
Went to a local restaurant for mothers day.
The platter included:
Costillas (beef ribs)
Chorizo Argentino
Molleja (Sweetbread)
Morsilla (Blood Sausage)
Chinchulin (beef intestine)
Tri-Tip
A close-up of the Blood Sausage. I love this stuff. It has an Anise flavor, the inside is the consistency of pudding with fat globules mixed in.
The food was all cooked medium-well, too cooked IMO but still good and juicy.
Everything was liberally topped with chimichurri (parsley,garlic,lemon juice, salt and olive oil)
Everyone except my brother and I had pasta and bread. They where falling asleep by the end of the meal
My brother has joined me in living the carnivore lifestyle for the last two weeks. Hes lost weight, gained energy and I think he's going to stick with it. I'm spreading the gospel!

We've been having some hot days in So-Cal lately........BBQ TIME!!
Beef Ribs (2 twenty inch slabs) $11
New York Steak $3
Polish Sausage $4
Side dishes......ummm......H2O
Waiting on the coals.....
Standing by for ignition......
I've started individually sealing my steaks before I freeze them...
Sear the ribs on each side over the coals........
.......brush on BBQ sauce and move 'em to the side to slow cook
Last thing to go in is the steak. Just a quick sear on each side.
Now that's what I call a "glamour shot". The ribs are still red on the inside. The other slab is staying in the grill to slow cook till medium well for my wife. The steak was still raw on the inside
These ribs were really fatty, about a 1/4 inch of fat on the backside.
For all the haters out there who think you have to be rich to eat beef every day, the entire cost of this meal was less than $20. Enough to feed 4 very hungry adults. For my wife and I, there is still more than half left over for tomorrow.

The tsp. of Agave added little perceivable sweetness to the mix. Could have done without it.... (and the 4g. of sugars). I ended up adding a little Stevia .....much better.

I do miss a nice glass of Chimay though. It's been a while since I've had any Belgian ale.....beer with 10-13% alcohol.....yes please!
Some of my favorites: (among many)
I never liked any kind of beer until about two years ago when my brother brought over a bottle of Piraat Ale.....It was like night and day compared to the typical beers you find at supermarkets. The flavor of a good Belgian Ale is quite different from what most beers taste like. And they have twice the alcohol too! I highly recommend a Canadian brewery called http://www.unibroue.com/our_beers_eng.html The best "Belgian style" ales made on this side of the pond.

Well, I'm not sure why but I'm still eating just meat and whole milk mozzarella cheese. What the hell is wrong with me? I thought people are supposed to die if they don't eat carbohydrates? It's been over two months since I started this and I'm not eating anything but rare/raw beef and cheese. No more vegetables, no nothing. It's a strange feeling......why am I not bored with this? Sure, I sometimes crave a donut, but I have gained a form of "willpower" that won't let me touch the stuff.
For the last week, I've been eating nothing but steak and cheese. No vegetables, not even eggs. I've begun going to the market by my job during my lunchbreak and have been eating 1lb of raw skirt steak with some whole milk mozzarella cheese every day this week. I'm not even hungry till around 6pm (my lunch break is at 6pm, I work evenings) So I'm eating once per day. I do have couple spoonfuls of coconut butter in the morning.
I currently weigh 204lbs so I've lost 20lbs since I began eating the true human diet. I've also been lifting weights 3 times a week and have been bulking up nicely. My wife actually noticed!
I took my blood pressure yesterday morning and registered 118/73. My best in years.

It's incredible how our body lets us know when it's hungry. When I was consuming mass amounts of carbs, I was always hungry....my metabolism was all screwed up.....obviously.
For the last few weeks, I've been eating one large meal per day....once in a while snacking on some cheese for breakfast or as a late night snack.....but thats it. I've gone through 4 lbs. of aged sharp cheddar in the last two weeks. Man, I love cheese.
Still having 2tbsp. of coconut oil and 1tsp. of cod oil in the mornings. Gives me a nice energy rush.
As far as supplements.....Calcium Ascorbate (Vitamin C) and Magnesium Citrate.
Meat every day, raw or rare......Not too much butter......lots of cream, about 1/4 cup per day. Vegetables once a week.....some blackberries once in a while.
Try this: Get some skirt steaks (flap meat), marinate in lemon juice, a little sea salt, and whatever spices you like for around 30 minutes......eat raw with some cheese and red wine....F'ing delicious.
Lots of water......a little coffee here and there
Weight down to 201lbs.....working out 3 times a week.....gaining some noticeable muscle mass and definition. I can't believe what a weakling I was a few months ago!

.....I work for a TV station and have been feeling very disillusioned. My work is meaningless....dare I say bad for society as a whole.....spreading misinformation. I wanna move to Alaska. Went there when I was working for PBS....what a beautiful land. If only I could convince my wife.
On a brighter note, we're going to Oregon to my grandfathers farm....used to spend every summer there. No more animals since it's a vineyard now.

Alex- It sounds like you are in a solid pattern of eating that works for you. Great. I can sympathize with your statement about becoming disillusioned. I wish that everything I put my effort into had more impact... but sometimes it just seems to be the same issues over and over. I wonder if I am really changing anything or just spinning my wheels. I think it's a good question to ask ourselves, as it makes us strive for more.
Thanks for sharing the Porcupine Tree videos. I had not heard of them yet. Very interesting.

Gotta agree with you about Alaska. What a wonderful place! My gf and I went there a few years ago. We went through most of the state, including going up to Barrow, which was really cool. Saw a bunch of polar bears!

Alaska is the place to be Dean.....I spent most of my time in the Fairbanks area and ate the best seafood I've ever had. The Reindeer sausage was awesome too.
So I've noticed something.
The last couple weeks I decided to eliminate almost all salt from my meals.
I felt fine, but noticed I was never thirsty. Either way, I just forced myself to drink water anyway. So I started doing the little pinch-the-skin-test...you know, the one where you pinch the skin on the top of your hand and then let go and see how quick it goes back to it's original shape. Well my skin was taking a bit to flatten itself......strange......so I added salt back to my food and BAM.....my thirst came back and my skin bounces back to flat instantly. This will require further research....
Keep in mind, I was drinking the same amounts of water the whole time.
I know Bear said salt is bad.....but....so far.....I'm going to stick with it.
I think salt helps to keep you hydrated. No salt...body tries to get rid of extra water to maintain homeostasis. Maybe it gets rid of too much water?
Oh well, time for some grass-fed beef n' eggs! One category that GF beef kicks grain fed beef's ass in is the way it tastes when raw.....wayyyy better!

It's been over a month since my last cig.....thanks go out to Allen Carr and his great book for giving me the kick in the butt I needed.
I feel awesome.....sleep better at night....wake up refreshed....the benefits keep appearing out of nowhere. I can actually run a mile without feeling winded!
Also, still going stronger than ever and eating like a wild animal....meat all day baby! I've pretty much eliminated vegetation from my diet except for spices, garlic, onions....etc. Some of eggs, cream and cheese too.
Bear was right about so many things, I CRAVE meat like I never imagined. It's the greatest food on the planet!
Still losing weight, albeit slowly.....down to 198.....goal is 185-190....gaining muscle mass from weightlifting.....feelin' great overall!

My brother has been on the bus for a few months now...I'm very pleased he's stuck with it. We both ate junk on Thanksgiving and felt horrible.......once you "experience" life on the bus, you can NEVER go back with a clean conscience. Every day I am more convinced this is the ONE AND TRUE HUMAN DIET. Carbohydrates are an addictive substance....one look at most folks I know is more than enough evidence. My mom was going to try to not eat bread for a while....she could not do it....it was VERY DIFFICULT for her. Amazing.

Until you get off the crap... then, you realize just how addictive it is. It's one thing to want to eat some meat cuz you haven't in awhile, but, it's a whole 'nother thing to be "starving" for something to eat... as the majority of people are ten times a day. Alex, has your HDL always been low? Other than that, not bad at all. From what I've been reading lately, the most reliable indicator of heart disease is a combination of low HDL and high tryglicerides. Your tri's a great, so it may not be that big of a deal. It would be nice to see it above 40, though. Eat some butter.

My Wife, who is not overweight and is a VERY LIGHT EATER but eats whatever she wants, smokes, does not exercise, etc......check out her readings:

INCREDIBLE!!! Is her low calorie intake the reason for this?

I have never heard of LDL as low as 35! I would almost wonder if that could be a sign of some kind of problem. She is definitely an anomoly. Her numbers are very uncommon for somebody with her lifestyle.

Quite odd indeed. To answer your question, I don't know if my HDL has always been low. This is the first lipid test I've gotten since I was 18. I would assume it was fine back then because the doc said nothing.

If what Dr. Eades and others say is true, HDL/TRIG ratio of less than 5 is important......
Mine would be around 1.6.....I will eat more butter and fat!

You mention HDL/TRIG ratio. I think you meant TRIG/HDL ratio. And, yes, that would give you 1.6, which is really good, IMO.
I'm not too sure how serious to take these lipid profiles. I should get mine done again just to see what is what.

Ah yes, I had seen that chart in the past, thank's for posting it here. We appear to have similar low HDL......your paleo days looked good for TG and your VHF days/LF days were the best for HDL. What to you make of it?

It is weird, isn't it? The SAD days almost seem to be the best, don't they? Except for high TG. BTW, the lowest TG was when I was eating quite a bit of fruit, so that's odd. My VHF was best for HDL, but, then, it was almost the same as when I did LF. I don't know what to make of all this. That's why I don't really know how much to read into all this. I was told by my doctor that total cholesterol will drive HDL up and LDL up as well. My VHF shows really high total cholesterol and LDL, along with high HDL.
I think I read somewhere that they now have home testing equipment for all of this. Do you know anything about that? I wonder how much it would cost.

Was your LDL calculated or measured? Large or small particles?
On the VHF diet, do you expect a lot of fat (as TG, HDL, and LDL) circulating in your blood, or very little? What about markers for inflammation, like C-reactive protein?

LDL was measured. I think large particles. I guess on the VHF diet, there is lots of fat circulating in the blood. While one is losing it, maybe that is normal. I had no testing for inflammation markers, or if I did, I did not look at all of that info.

Your tri's have always been on the lowish side. That's good. Low tri's are usually an indication that your LDL is usually mostly the large, fluffy kind. And that's good too. But I'm sure you already know all of this.

What Jeff said. If you know the ratio of large to small particles, you have a better idea of whether your cholesterol is dangerous. The other clue to what might be going on in your arteries is inflammation, right? If your cholesterol is in small particles and inflammation is high, you might be laying down fatty plaques and risking rupture, embolism, and atherosclerosis. Usually, though, particle size and inflammation markers are not measured, and nobody sees what your arteries actually look like inside.

Hey everyone, I'm up in Oregon looking after my grandfather (just had back surgery)
While in the kitchen today, I found my grandmas blood Glucose meter.
She passed away last year from Heart/Kidney failure. Dr. was not sure of the cause, but I suspect it was due to her overactive pancreas making too much insulin all the time.
Anyway, I decided to try her BG meter today. I have never tried one of these devices but it was really easy.
I have taken one measurement so far.
9:30 am, about 15 minutes after a meal of:
3 hard boiled eggs
about 5 oz. of cheddar cheese
1 tablespoon of chimmichurri (garlic/parsley/olive oil/lemon juice sauce)
My BG reading was 100.
At 10:55am, around one hour forty five minutes after eating, my BG was
102

Alex, as I was washing dishes, I was thinking about how BG and insulin affect people in different ways. For example, your family is predisposed to diabetes and my family doesn't live long enough to get diabetes, we just get heart attacks and strokes. I had one at age 46.
The thing is all of these things are caused by high insulin and BG and this attacks your bodies weakest link is how I suppose you would call it. I'm no expert and we all know that we need to keep our BG and insulin low. However, it's easier for me because my BG is more stable and not all over the place like some others. Didn't prevent me from getting that stroke 13 years ago though, so it's imperative that I eat ZC.
