Introducing me.. :)Hello all! My name is Ellen, and I believe that a traditional, non-chemical, low carb diet is the best for optimal human health. My goal in learning to eat this way is to feel as good as possible, for as long as possible. Been at it for about a year now, with excellent results. I feel good!
I am also in the process of writing a website which showcases the health benefits of clean, traditional foods (grass fed beef, organic chicken and eggs, traditional fats, organic veggies, etc..) and alternative health theories (cholesterol is GOOD for you).
I'm finding that the more I learn about health and diet, the more I'm convinced that low carb is the way to go, and the best thing to do for your health is avoid sugar, cereal grains and mainstream medicine.
My boyfriend Clair and I live in Wyoming and we have three greenhouses. We grow our own vegetables, and buy grass fed beef, pork and lamb from local ranchers.
Our goal is to eat as little processed, chemical laden, franken-food as possible. We have 14 chickens, so we have fresh organic eggs and uncured bacon or sausage just about every morning. We also have turkeys, a Boston Terrier named Humper and a cat named Kishi.
I'm glad to be on the bus, and I'm looking forward to getting to know you all..

Sounds like you have figured out the diet of the future. Grass-fed animals and organic veggies is (hopefully) what people are going to figure out is the only sustainable way to raise food on this planet. I have many friends in the country that are into the same thing. I'm also working on starting a bison ranch and will be raising chickens for meat and eggs this spring with some buddies out in the country.
