Lazy Chicken & Chicken Soup/Broth

Okay, sometimes I get REALLY lazy and need food, lol!

You know, you're at the grocery store, it's late, and you're hungry and you also need food for the next day or two.

I buy a rotisserie chicken (yeah, I know they have crud in them, but they don't really bother me).

Take home, eat what you want.

Well, if you eat the whole thing, buy two.  Wink

I usually eat the two wings, and two of the drumsticks.

Take the skin off the rest (and eat or whatever) and throw the rest of the whole thing, bones and meat and all, into a pot. You can add sliced onion & celery if you want, or not. Add water to barely cover it. I add salt & pepper, or you can add it later to taste.

Cook for about an hour, adding water if/when necessary.

Strain the broth, and rip the chicken up and put in the broth. Voila, meat with yummy broth to keep it from drying out or developing that nasty weird next day chicken taste.  Grin

I do the same thing but with a low sodium canned chicken broth.

I bought a rotisserie chicken tonight, but I used almost all the meat (almost all, as my husband ate a chunk out of the breast, lol) to make chicken salad. I just added mayo, salt & pepper, garlic powder, and onion powder to taste. It is delicious.

I threw the carcass and am cooking it in water for more stock which i'll freeze.

any leftover carcass or bones from chicken wings etc will make excellent and good for you stock!

I save all the scraps from veggies (you know, cauliflower leaves, radish tops, squash skins, old parts on green onions) and store them in the freezer.

when I have a carcass (or like today I have turkey legs and wings) I fill my pot with water over the top of the bones, add a bay leaf (or 2) and 15 peppercorns and 1 T apple cider vinegar (to draw from the bones).. let it boil then turn down to simmer. then I throw in my veggie scraps (half a yellow onion with peels ON is a good addition) and let it simmer for hours and hours. then you put it through a strainer.

today im going to pick off the turkey and use it in a pot pie type casserole, then I will pour the stock into mason jars (actually they are old sauce jars). usually the stock is hot so they seal up nice! it gets that lovely gel on top too.. generally I get about four 20-24oz jars full.

so good for you and so yummy... perfect in soups and dishes that call for chicken broth/stock (instead of that canned stuff)
