Marrow?

I've been reading quite a bit about marrow lately.

When I was a kid, my stepfather would tell me stories about his grandmother who would eat the marrow from her chicken bones. How the heck do you do this?

I've read I can go to the butcher and ask for marrow bones, how do people eat these?

Boy, Cody, I sure would love to get my hands on some bones for the marrow. I too am curious about this.

I asked for beef bones at my local grocery store chain. They were fairly cheap. I just cooked them in the oven at 350F until the marrow started oozing out. :) I think I used a long handled wooden spoon to scrape the goodness out. I think they cooked for between 30 and 45 minutes?

So, Jessica, did you just eat this marrow by itself or put it on something?

I just ate it as is. It was unbelievable. I also added some to some hot water for a kind of broth. That was really good too!

Hi,

I went to see my butcher today after work and he cut up some fresh marrow bones for me on the spot.  I love my butcher  Heart .  I read that you should soak them in salt water for 12 - 24 hours before you cook them.  Do I really need to do this - it is to draw out the blood but I am thinking that leaving the blood in would be pretty tasty too.

Um.  Hi :)  I eat pretty much the entire chicken bone.  After I go through a rotisserie chicken from Whole Foods (2-3 meals), generally the only discards are the bag, cardboard tray, and a few bone shards that were too tough to chew.  Which is really too bad, because I never have a carcass left to make broth out of like all the recipes tell me I should  Roll Eyes

heyo jeff!  I've been here and there...lurking mostly  Oops   I'm still working on figuring out my own WOE these past few months, which doesn't really look anything even remotely like ZC, which is why I haven't said much...not sure I'm cool enough to hang with the gang ;)  I do still love my meat, though.  And my chicken bones - the tail, neck and backbone are especially delish Heart

OK, I need to learn how to do this. Is it just a matter of cooking the chicken longer, or what? I've gotten to the point where I eat hot wings, I eat the gristle and some of the ends of the bone, but the rest of the bone seems too hard?

Honestly, I can't tell you how to get it so the bones are soft enough to eat.  The ones I eat are always from the rotisserie chickens from Whole Foods, but I have had barbecue/roasted chicken from other restaurants where the bones were much more brittle and not as edible, so maybe they're just serving up magical chickens? LOL  

All I can guess is that some long, slow method of cooking will be more likely to get the cartilage and bone tissues to break down enough to be more easily consumable.  I think I once read somewhere else online (T nation boards, maybe, or muscle hacks?) that pressure cooking a chicken can also help to obtain softer bones.

Just as a warning, you definitely don't wanna try eating the bones if they're not soft!  I'd worry about potentially doing damage...

I'm still not eating any grains or sugars, and have very limited and rare servings of starchy plants/tubers/gourds, fruits or legumes (*cough* peanut butter *cough*). Recently I decided to cut out dairy, since I've always been a bit lactose-intolerant and even the occasional encounters with cheese & greek yogurt were making me feel less than stellar lately.  About 95% of what I now eat is meat & eggs, leafy/cruciferous veg, avocados, nuts, unsweetened chocolate and hot cocoa (cocoa powder with stevia Heart), along with various butter/coconut/olive/nut oils.  I guess if you were to try to pin any particular diet/nutritional model to me, it'd be something like Paleo/Neaderthin/Primal Blueprint, but with somewhat lower carbs.

While I might try ZC again in the future sometime, I think I was feeling just  a bit too restricted by it the last time out especially *in combination* with a bunch of other stressors in my life at the time, which led to binge behavior.  I'm still struggling to drop the last couple of pounds that I gained during my not-entirely-VLC experimenting last year, but for the most part am feeling better these days. :)

I'm glad to hear you are feeling better and are busy experimenting with what you can handle. That's what the Bus is all about, ya know. We are carnivores, cuz, our ancestors adopted that WOE, but, we are modern carnivores, so we don't need to be so strict, IMO. Even Bear did dairy, nut oils, coffee, lots of seasoning, etc., and got along just fine.

It's good to hear about what's working for you. After I get the body comp I want, I'm going to experiment with some things as well. Perhaps some berries? We'll see. It's a long strange trip, now isn't it? Cool Glad to have you aboard. Yup

Hey, I have a bone to pick!!

Wow..I am not even signed up for this board yet(well I am now), and MY beef marrow bones are here ahead of me! (that's my photo that Lynne posted)

I always follow my bones around, so I just had to come visit them.

If anyone wants to know how to roast marrow bones, give me a shout.

I hear that you can pressure cook chicken bones to make them soft enough to eat, though I have never tried it myself.  I always just cracked them in half and ate what I could.
