Amounts are approximate.

3 lbs. ground beef

2 eggs

1/2 cup parmesan cheese

spice mixture (Italian, garlic powder, onion powder, etc.) to taste

2 oz. cream cheese, softened

LC ketchup

lard for greasing pan

Preheat oven to 400 F. Place all ingredients except ketchup in mixing bowl. Mix together by hand. Form into meatloaf shape. Place loaf in greased glass pan. Squirt a bit of LC ketchup over the top. Place in oven. Let cook for 10 minutes, then turn heat down to 300 F. Cook for about 30 minutes.

Alisa, does it all stick together OK? Can you slice it cold for lunches without it fragmenting?
I've been planning to make some meatloaf and was going to try LSA for the fibre (in place of breadcrumbs) and to make it stick together.
