Salmon BenedictNothing fancy here, but it tastes great.
Just cook a piece of salmon however you like it, put it on a plate, and cover wtih hollandaise sauce. I fry mine in butter with fresh ground pepper. Yummy.
When I don't have time to make the holly, I fry a couple eggs over easy and break the yolks over the fish.
Here's the recipe I use for holly:
981 Calories; 102g Fat; 8g Protein; 2g Carbs
3 egg yolks
1T lemon juice
8T butter cold and cut into pieces
Wisk the egg yolks and lemon juice in a small sauce pan over very low heat for a minute or two. Add 1/2 of the butter. Continue wisking until butter melts. Wisk in the remainder of the butter. Continue wisking after all the butter is melted, until the sauce starts to thicken. This takes a few minutes. Make sure your heat is low or the sauce will curdle.

Yes, but thicker, so it won't run off whatever you put it on.
