Starbucks!Calling all carnivores - I need a name for a "new" Starbucks drink!
I met a friend of mine yesterday evening at my year-round Farmers Market. I'd placed a mega-meat order with a local farm, and they'd forgotten to include a few items so I went to pick them up (roasted coffee beans, wildcrafted elderberry jam, which I will hold off on for now, and grass-fed ground beef). I snagged a couple NY striploins, bacon and 2 venison steaks as well. My friend, who has Crohn's and eats terribly, was VERY impressed with the meats there, and is planning on doing more natural meat shopping (hooray!)
Afterwards, we hit my Dominion (grocery store) so she could get some Ensure. She's in a flare and doc ordered a liquid diet - there's gotta be a better option than Ensure. That stuff is horrid. We talked about her eating, and I suggested she go for, at least, getting more protein and fat into her, and she is interested in quitting grains to see how it makes her feel. Another yay!
So I treated her to Starbucks. She got some apple cider/caramel thing, which made my teeth itch just looking at it. I ordered a latte, and asked if they'd make it with cream instead of milk.
"Is 10% okay?" the barista asked. Sure, I said, if that's what you've got.
"Yeah, it's called a breve. You know, someone came in once and asked for a latte made with, like, whipping cream, the 30% stuff. Like, euw."
My eyes lit up. Yup, I said, if you've got that, then that's what I want.
"Really?" she asked. "Seriously?"
Oh yeah.
"Okay...wow, we don't even have a name for that."
So I'm thinking Starbucks needs to add this to their menu, fancy name and all. All I can come up with is "High-fat latte". Help me out here - my goal is to see this on their board!

You are right...and why not an Atkins Shake? I'm not big on premade anything, but these are a HELL of a lot better than that Ensure crap!
As for what to call it, hummmmmm.....

When I'm off the bus, I would go to Starbucks and get hot chocolate and I always ask for their heaviest cream instead of milk or breve.

zilla came pretty close. It is actually called caffé crème, and it is already a drink, at least in any real coffee shop.
Since these coffee names are all in Italian, here's a little lesson in that language.
Straight espresso is known as caffé.
Whole milk is latté.
Half & half is breve.
Heavy cream is crème.
Therefore,
A caffé latté is steamed whole milk and espresso.
A caffé breve is steamed half & half and espresso.
A caffé crème is steamed heavy cream and espresso.
It is customary to not include the caffé in these names, hence they would just be called latté, breve, or crème. So, on "the big board" , it could be caffé crème or just crème.
BTW, mocha means chocolate, so don't even think about it, Tracy!

So it does have a name - figures in 'Bucks, they've no clue. I will dutifully inform them! Though I'm liking "High-fat latte" for the shock value. And no, Dean, no mocha!

Yah, I've heard Starbuck$ calls everything "latte". They will ask if you want a "breve latte". Yah, forget the java, just give me a cup of whole milk and half & half!
Here in the Carnivore Cafe we serve only caffé crème.

What do the percentages refer to? Not fat, right? Because half and half should be about 75-80% fat, and cream should be about 100%.

Everything is a latte at Starbucks, except for the stuff that ends in "cino". Not that I'm any kind of coffee connoisseur - I'm more a tea junkie, though I do enjoy a coffee esp when I can grind my own beans :)
Corafan, half & half is listed as 10% milk fat, heavy cream is 35%. Someone smarter than me will know what that means exactly.

Tracy, it's the amount of pure fat in the cream. There is stuff called "clotted cream" that is 55% fat! jeff should have been using that during his experiment!

I coffee. Luckily, I have learned to love it black... and don't have to deal with latte vs creme. Once I went to black coffee all the time, if I added cream it seemed strange. I never used to drink it black. Weird how that happens.

But in all reality, I wish I knew where to buy clotted cream, it sounds awesome. I have never seen it.

Clotted cream is real British thing. I'm surprised you don't have it up there in the great white north.
The only place you can find it around here is in the homesick shops for Brit ex-pats.
It's in a CAN.

I wonder if clotted cream is like the heavenly stuff at the top of a big carton of heavy whipping cream. The layer at the top of the carton is thicker and beyond yummy. (sigh) Pure pleasure.

If it is here, I just haven't found it yet. It's definitely not common. I saw some expensive cream in a jar once but I don't recall it being any higher in fat.
In a can you say? Interesting...
I'll have to ask around, especially those Brit ex-pats.

Clotted cream? I'm on it. Must find it. I'm sure I've seen how to make it, somewhere - maybe in NT? (Maybe I'm thinking of something else) I would love to walk into Starbucks and order a caffe clot. The 16-yr-old barista, with her shiny braces and sproingy elastics, would, like, totally flip out and be, like, huh?
Red - head on down to my 'hood sometime! We gots tha fat here in Liberty Village :) A caffe creme is dinner...sooooooo rich and delicious and filling!

Got this recipe for clotted cream off the food network site.
2 cups pasteurized (not ultra-pasteurized) cream
Set a coffee filter basket, lined with a filter, in a strainer, over a bowl. Pour the cream almost to the top of the filter. Refrigerate for 2 hours. The whey will sink to the bottom passing through the filter leaving a ring of clotted cream. Scrape this down with a rubber spatula and repeat every couple of hours until the mass reaches the consistency of soft cream cheese.

I went in to a Second Cup (Canadian version of Starbucks, and better coffee IMO, not that's Bucks is hard to top) and decided to treat myself after the Feb challenge. Ordered a decaf (it was late) sugar-free vanilla caffe creme. I got this:
I explained that I wanted a latte, but with heavy cream instead of milk. I got this:
Just as Jeff predicted - but I didn't even have to say "clot" to get the shock factor.
As I left, the guy said to me "Wow, I've never done that before."
(no Dean, that's not the first time I've heard that )

The last time I was at Second Cup, I ordered a decaf, sugar-free, heavy cream coretto latte with no whip cream on top (oh, no I have become one of them! One of them with a coffee order name longer than U.S. presidential campaign). Anyway, I finally get my coffee and what is across the top? Thick sugary caramel syrup! Yikes, did I not say sugar-free?? Anyway, I gave it back they made it again and it was worth it. Yummy x 10.
I find that when I order this, I have to talk slowly and stress that I want the heavy cream. Oh well, we are breaking ground here, pretty soon everyone will be ordering them like this.

OK, what the crap? None - NONE! - of the Starbuckses or Second Cups I frequent have whipping cream behind the counter! In fact, Second Cup doesn't even have coffee cream - they only have half and half! I feel like I'm living in an alternate universe where nothing is awesome.

Where in Canada do you live? I got mine when I was in Edmonton. The guy said the cream was 33%. I find it hard to believe that they do not serve full fat cream in their regular coffee. Also, how do they make their whipped topping if they have no real cream in the place??? I smell a rat in the Second Cup you go to.

I have a Strarbucks story from my recent trip. I'm at the Tampa airport, getting ready to come home on monday. I spot a Starbucks and figure I'll go get something to drink while I'm waiting from my flight. I order a latte, but ask for "the heaviest cream you have, instead of milk."
To her credit, the barista did not give me this:
But, she did make some kind of indescernable sound that conveyed a sense of disgust. She also physically shuddered while making the sound. It was quite amusing. The drink was awesome, BTW.

He also said that whipping cream isn't supposed to be steamed. I can't figure out why that would be?
Apparently Starbucks has some sort of online community crap thing to solicit ideas from customers - shall we all innundate them with requests for the high fat latte to be included on their board? Right next to the skinny latte, say?

Good idea! I'm sure they'd wonder what the heck was going on. I steamed some heavy whipping cream a few days ago with no adverse effects. I have no idea what the problem would be.

Heather, you'll have to take that up with jeff's Dairy Company. I'm not responsible for any of it at this point. Yesterday, when I informed the stockholders that I'd be giving up cream and only using butter, they told me they'd have to liquidate all my remaining stock and overnight the proceeds to me. This morning, UPS delivered a large shipment of unsalted butter.

Dean - my investigative team has informed me that a con panna is espresso topped with a "bonnet of whipped cream". We're going to have to stick with HFL, or "caffe clot".
