Thai beef salad

This is a recipe handed down from my mom. It's great for those really lean cuts of beef like round steak. It's a very general recipe and you season to taste.

1-2 lbs round steak
1/2 lemon
1-2 tbsp fish sauce
salt and cracked black pepper to taste
1 bunch cilantro
1 bunch green onions

Fire up grill to medium-high heat. Sear steak medium to medium rare. (the rarer the better, but do want the steak to release some juices) Pull steaks off of grill and let them rest while you rinse the cilantro and chop it to bits (use as much as you like, I use about half the bunch). Slice green onions (I like slicing them on the bias as it's prettier) Put the vegetation into a bowl. Slice round steak (should still be fairly warm and will probably "bleed" all over. That's ok, put the juices and sliced steak into bowl with the green stuff. Squeeze lemon over steak, being careful to catch the seeds. Squeeze a couple tbsp of fish sauce to taste over the steak (go easy if you've never used this stuff, it can be overwhelming) and a little salt (if you use it) and pepper. Mix well, check seasonings and adjust for salty vs. sour. Some like more salty than sour, but I like more sour. You can also add some of those small hot peppers (thai peppers? IDK, we grow our own) to taste. Don't over adjust the seasonings. If it seems almost "right" don't tough it for 5 minutes and then stir and check again. The longer it "marinates" the more the flavors come out.
