I so agree with this. I abhor waste. In a way it is disrespectful to the creature that died. KWIM?

Yah, I do. And, if we did evolve eating all of the animal, then many of us might be missing many necessary nutrients as well.
I would like to begin exploring some of these animal parts. It's hard, but, it's probably only good to do so. The large meat processor, that is only a couple miles from me, has all sorts of animal parts I've never even thought to try. If I start getting naturally raised animals from local farmers again, they usually include everything. Will have to figure out how to prepare a lot of this stuff.

That's almost free!!! I've never had tongue.....well, not beef tongue , but I've heard it tastes like......well......beef.

Beef tongue is INCREDIBLE! Lots of Mexican eateries where I live and they all serve "tacos de lengua" I don't get the tacos, they sell me a pound of cooked tongue for 6 bucks. If you wanna cook it at home, in my experience, tongue must be slow cooked in a crock pot, then diced into small bits. It's soooo good.
