Ok I admit it, I love Disco.  It motivates me to keep on keepin on.

I am new here, and relatively new to LC/VLC.  I started in August of 2008 because I need to lose weight and I have been diagnosed borderline diabetic.  I like many women, have pcos and am insulin resistant, I also have high blood pressure.  I believe through diet and exercise I can correct all of the above and eventually stop taking BP and Diabetes meds.

I started out at 240 pounds, kinda large for a woman who is 5 foot 7.  So far I have lost 20 pounds and 10 inches. My goal is to weigh 150.  I am one of those slow losers for the above reasons and also because it has been very hard for me to exercise.  But that has been changing lately.  Last year I severed my achilles tendon and had it sewn back together, I am now beginning to be able to walk a good distance of up to 4 or 5 miles a few days a week.  Before that I broke my other ankle in a hiking accident. (many years before).  All seems to be healing quite well, and it's time to get up and move!!  I just have to be a little careful. I used to be a long distance cyclist and hope to add some of that back in this summer, in the meantime as soon as the weather permits I will do some 20 mile flat rides.

I started out doing Atkins, and it does work, but I am tending towards a lower carb plan, as I don't lose if I eat any more than 20 carbs.  I am conducting my own science experiment right now on myself.  I have been eating under 9 total carbs a day, with about 1500-1600 calories, I am on week 3 right now.  I am basically doing the old M&E, with a tad of cream in tea.  Your gonna have to pry that cream out of my cold dead hands!  No cheese, just meat and a bit of spice and herbs and tallow for cooking.  On occasion I do mess up, but I am only human.

I am constantly learning, and would welcome any advice or comments from fellow board members...or just drop in and play some disco and have a twirl on the dance floor.

I am not sure how to post a pic on here yet, so the dance floor will have to wait...Once  it's here I will hang the disco ball Grin

Lynn, I doubt I will list my daily eats in this journal, it would be a bit repeatative.  Unless inquiring minds need to know..But right now I have so much time on my hands who knows what will happen?

The race is August 2.  It really looks like alot of fun.  It's called the Rock & Roll half marathon.  They have bands playing every mile along the course, and then a big post race concert.  I haven't seen any of the bands plaing yet, but I think they tend to get pretty good talent.

sounds like something that would be fun even for a spectator!!!

Jeff, that sounds more like a party than a marathon, but that is how it should be.  I used to do the MS150 every summer with a bunch of friends.  It's a 2 day 150 mile bike ride to raise money for Multiple Sclerosis.  It always ended up at some great place with kegs of great local beer and bbq.  I miss being able to ride 70 or 80 miles in a day...hopefully I can get back to that point, your inspiring me. Yup

So here I am sitting on my ass typing away talking about health, I better get off my ass and get some exercise.  It's cold outside but I just gotta do it anyway.

I have been wanting sweet things late at night recently.  Not sure why, perhaps my lack of alcohol.  I have upped my fat lately, not really on purpose, it just happened because of the bone marrow I have been eating.  Protein went down because of this, and lo and behold...no more amonia pee smell. Yup

I have about 10 more days of my experiment, and then I will decide which direction to head in, or stay on this path. To try and lower my 30 day average on carbs I have to eat 2.5 or less carbs per day for the next 10 days. That would put me at about 6-7 carbs a day average for 30 days.  My first few weeks had some eating out, and a small amount of veggies in a pot roast and some condiments that had some carbs in them.

Whichever path I choose, it will be VLC or ZC. From what I have been reading, that is medically the best thing for someone that is very insulin resistant such as myself.

Well, in 3 weeks I have lost 10 pounds and 2 inches off my waist.  Not too shabby.  I am hoping to be under 200 by April 1st.  Yeah me!

I made bacon grease mayo today..It was really bad, threw it out.

I made EVOO mayo today...it tasted horrid!! Threw that out.. And I have always loved olive oil..Christ..I am part Italian.  

I think my taste buds  are changing.  I have some expeller pressed canola mayo but I hear canola is horrid too because they have to de-odorize it somehow, and what kind of chemical do they do that with?

I really like to make fresh chicken salad with home made mayo and creme fraiche. I can do without the creme fraiche. Mayo dilema here...

I cannot afford macadamia oil..or avocado oil. And I don't want to use heated oils.

Can't a gal just have some fucking decent mayo? Confused

y0u are having the same dilemma I've been having for years. Yup

I love deviled eggs Heart , but, I cannot have them anymore, cuz, I finally said goodbye to the mayo. Wave I tried making deviled eggs with sour cream, butter, and I can't remember what else, but, in the end, I just gave up. Roll Eyes

I decided to not only give up the mayo, but all condiments. Mainly cuz they are just too expensive for what you get, and also, cuz they usually are either carby and/or they are loaded with other crap.

Now my thing is to use herbs & spices (dry seasoning) to make meat and egg dishes taste wonderful. I've always been very instinctual with seasoning food, so this is a no-brainer. I can keep my carbs way down this way, and still enjoy the flavors of good seasoned meat and eggs. And, of course, starting in one week, I'll also be able to add cheese and butter to meat and eggs, which will help me stay on course even more. Cool

Hmm...the ONLY problem I am having with eating 80% fat is that I don't want to sleep, or can't sleep until really late..well actually it's early..like 2:30 am.

I certainly don't have a lack of energy, I do have a lack of an appetite.  I suppose I could try and exercise more..now there's an idea.  Evening exercise.  hmmph..

I suppose I could try reading GCBC....that's so boring it might put me to sleep.

or I could...Take all the doors of their hinges and make beaded curtains out of beer can tabs

or I could put a bar of soap in the microwave and hit the popcorn button

or I could experiment with making custard in the dishwasher..again..

Vicodin? Hmm....that might work..

bwahahahahah y0u crack me up! I wrote this in Dean's Journal.

Mary Enig and Sally Fallon make a mayo that is made from 3 different fats:
extra virgin olive oil, coconut oil and sesame oil. But they use lemon.

So you could sub out tarragon or garlic flavored vinegar for the lemon if you want to stay totally purist or you could say screw it and for the couple of tbsps of lemon in the entire batch, your carb count is obscenely low, and maybe try different combos of fats like:

extra virgin olive oil, melted beef fat, clarified butter (more like a hollandaise sauce really)

extra virgin olive oil, coconut oil, melted beef fat

that sort of thing...I am gong to try making it this afternoon maybe? In order to try some for dinner. I will let you know how it turns out!

Pooti!!! Hello Hello!!  Thanks for the mayo info, and yes...please let me know how your mayo turns out, I would be very interested!!

I do use tallow and butter and olive oil...so that would be a perfect mix.

So today I made hot wings...mmmm.  I had to use the mayo I had in the frig to make the bleu cheese dip.   First cheese/sour cream I have had in 30 days...mmmm.
I used enough butter/bleu cheese dip to make it  77% fat..Woo Hoo!! I'll be eating on these all weekened and into Monday.

So, what kind of seasoning do y0u put on those wings?!

I've been using Red Hot sauce, but, since I've given up all condiments and am only going to do dry seasoning (herbs & spices), I will want to make chicken wings using those things. I know about the heroin wings, and will definitely try them, but, was wondering what you or others use for seasoning on these guys.

How do you make the dipping stuff? I may try it, but, once again, am really trying to stick to just meat, eggs, butter, cheese, and dry seasoning. Much simpler and easier to keep carbs super low, while still ENJOYING my food! Cool

Speaking of enjoying food, I will use fresh lemon and lime juices on my fish and such. As Pooti said, screw it. The carbs in dry seasoning and those juices are not going to be worth counting. And, who the hell wants to spend their life inside FitDay all the time! Roll Eyes

Dean, I made my own seasoning mix and ground it fine in a coffee grinder.(I have one just for spices).  I don't have exact amounts but I have a feeling you can figure this out.  I have never counted seasonings in Fitday, just eggs, meat and dairy, I'm not THAT crazy.

paprika
tri colored peppercorns
garlic powder
onion powder
cayenne
oregano
celery seed(go light on this)
no salt(salt substitute) it's just potassium, or use real salt

That is just a basic cajun spice rub.

I make a mean jerk seasoning too if you want that.

The dip I made might not suit your dietary needs at the moment. And I am not sure how I will react to it either..we'll see.  I used the mayo I had in the frig, at least it's expeller pressed.

1 part mayo (let's see if pootis mayo works out)
1 part sour cream
crumbled gorgonzola or any bleu veined cheese
cracked pepper
a bit of vinegar
cayenne
1 clove fresh garlic minced

IF you can deal with sour cream, you could just use that?  Yogurt made with Heavy cream would work too.  GAWD..full fat goat yogurt would be killer..with bleu in it..yah..(excuse my orgasm)

I am getting some goat chevre on Monday and I will be experimenting with that.  I would prefer to use goat as my sole dairy source for Februarys challenge, but money is an issue for me right now.  Perhaps thinning the chevre with something would make a good dipping sauce for wings?

The hot sauce is just louisiana hot sauce and a stick of buttah!

This is the first dairy I have had in a month besides a tiny bit of heavy cream, if I start to gain I will toss it out again.

I hope y0u are feeling better.

This makes me a bit leery of starting dairy back up on Wednesday. I'm hoping I won't have any bad reactions. My sinuses often give me problems, but, since going to just seasoned meat and water for the last 2.5 months, I have had no sinus problems at all. If my sinuses start bugging me, once I reintroduce the cow pus, I'm gonna have to put it back down in a hurry! Yup

Yep...I am a feeling better, not all better but better.  I think it has something to do with butter.

My lungs have a bit-0-goo in them, and nice piles of snot are flowing freely forth from my nose.  Maybe I can create my own river...?

BTW...that was a local steak from a company that my friend ownes called Knee Deep Beef, it is grass fed, free range, and humanely slaughtered...it also retails for about $15.  But It was free for me.  That one was a bone in NY, she gave me this killer Ribeye for Xmas that was THE best steak I have ever had in my life!!  We have some great Buffalo around here as well.

I'll stay out of the grain-fed vrs. grass fed debates in the regular forum, I happen to know the difference, both in taste and ecological impact.  Unfortunatly (Dean don't give me shit) I am living on $171 in food stamps a month right now until I can get a job.  Paying my huge mortgage seems to be a priority.  So I get grass fed when I can, or when nice friends give it to me..

I found the special Kool-Aid.... I may have to go dancing tonight?

Thought I would just say hello seeing as how we are very similar health wise. I also have PCOS and high blood pressure and am VERY insulin resistant. I tried good ole' LC but it wasn't enough to take off any weight so I'm back to the carnivore way to see what happens.

So I weighed in today, I did not lose or gain. So I have indeed kept off the 10 pounds I lost last month!!! Woo Hoo!. Last month was an experiment for me, I am heading for ZC(which means 5 and under in most circles) for a little while, probably until summer when I grow my own veggies. I ran a monthly average and I will post my stats. This month I am aiming for a little higher animal fat intake, slightly less carbs, less protein. and maybe a few more calories so I can incorporate my upped fat intake. I also am becoming more active so I need the fuel.

Last months daily average stats:

Calories:1,563
Fat: 75%, 133.5 gr
Protein: 23%, 88.3 gr
carbohydrate: 2%, 6.4 gr

This month I am aiming for more like 80% fat, 19% protein, 1% carb, 1700 calories. I am adding in up to 2 oz of goat cheese to the mix and keeping my tablespoon or two of heavy cream for occasional coffee/tea(no cheese on cream days), we'll see how that plays out, if I gain or stall, out it goes.

I am hoping to be in ---->Onederland really soon<----, maybe by the beginning of April.

Ahhhh.....  Butter and meat together...This is my 5 1/2 pound round tip roast with a stick of butter on top(and a whole bunch of herbs) I will roast it later

I always did like lots of butter on my big thick pieces of meat Devil

Lynne, I think it was MOSTLY a cold, and a little bit of dairy shock.  I have adjusted now but I don't eat very much dairy, and I am sticking with goat mostly.

My waist has shrunk, the belly has a long way to go.  I carry all extra weight between my boobs and belly, definitly an apple shape.  Boobs are shrinking too, not sure I like that as much as my waist shrinking.

On protein, I really don't eat that much at all.  I am averaging about 85 grams a day.  I could very easily eat more but I want certain ratios for this month.  I am a lab monkey.

The roast is amazing, I will eat off that thing for a good 9 or 10 days.  Who needs a boyfriend when you have a succulent juicy piece of meat that puts out every time and doesn't talk back...  well..I suppose it can't do everything..but it's pretty damn close,

Dean...go make some pemmican!!  (and send it to me)  hahaha LOL
