PLEASE keep posting these types of posts! Yup They are so fascinating, informative and inspiring. Feel free to start a thread in the Nutrition & Health forum on this subject. It's so wonderful to have your first hand knowledge on the Bus! I agree with everything you are saying, and have thought this way many times. If anything, our immune system will just get stronger the more we are exposed to these little guys. I myself have eaten a quarter pound of raw ground bison, and it didn't phase me in any way. I felt completely fine. It was odd to do it, but every habit takes getting used to, then it seems totally normal.

Personally, I would not eat a carnivore unless it were a matter of life and death. It doesn't seem the natural order of things. (Not my usual logical approach, I admit)

It looks like there is a lot of good participation on this challenge.  Unfortunately it occurred to me that I can't participate because of a psyllium husk product I am using so I request that my name be removed from the particpants list.  

For the unofficial record I did eat to the challenge otherwise for the last 3 days and will share something I came up with.  I cooked some Country pork ribs (the big boneless ones) and wanted some kind of a sauce so I mixed 2 tbsp melted butter with 1 tbsp of chipotle tobasco sauce per rib for dipping after they were cooked and it was really good.

I'm out today. Lunch was a couple of bunless burgers and they were loaded with lettuce and tomato. I couldn't complain since hubby bought them for me in between running all of his deliveries and appointments. I had asked for the $1 double cheeseburgers, but I ended up with the $1 wopper juniors. Oh well....as long as the bun gets tossed, it's all good  Bonkers

Do fresh chives count as a spice? Did we ever get a concensus about vinegar? I used both in my egg salad today. Confused

As far as I know the vinegar was ok.  Chives, unless you use a ton of them, would dry down to little more the amount of cayenne I like to use, so I say OK!  Grin

Kristelle - I know high=rotten. I meant how'd you come upon rotten meat? Did you let it go off on purpose? Find a dead gopher on the roadside?  Wow And - how'd it taste? DETAILS, man.

Sassy, thanks for the rib dip tip. I have a ton of ribs in my freezer, and now I know what I'll do with them. I've always liked lots of bbq sauce, but this sounds really, really good.

So, since this Contest is gettin' so easy (I think Tracy said it best... La dee da LOL ), I've been gettin' my kitchen clean of all the brats and bacon, and I'm NOT buying anymore cheese or processed meats (ever). In fact, henceforth, the only dairy I'm a gonna do is butter and cream. I'll probably be workin' my way off that next month. Wink I am SO looking forward to gettin' back to clean cuts of meat. I used to never eat processed meats, but, for some reason, last Fall I got into this salty, chemically junk. Sad Weird. So, one step at a time... as long as it's forward. Cool

Since I was off the carnivore caravan yesterday, I also helped myself to some coconut butter (yummmmmmmmmmmm) and make a beef & portabella soup thickened with pumpkin (based on a LindaSue recipe) for dinner. Weight is still the same this morning and I am back on meat today.

Like Dean, I am looking at dairy as my stall source, though I still don't want to believe it. I am from Wisconsin!!! No dairy is just so wrong! LOL

I let the meat sit in the refrigerator for a few days. Depending on the cut of of the meat or type of meat, it tastes better or worst. However, the smell is always bad. For example, bison tongue tasted better but veal ossobucco tasted worst as did beef rib steak (already aged, on top of that when bought). It depends. Aged fish, especially fatty ones like sardines or mackerel, I can' tolerate (too much histamine). The next day, I feel very nauseous and stomach pains.  

Right now, I have some bison heart sitting in the fridge for at least 4-5 days. Yummy... Happy

Well unfortunately I stepped off the bus yesterday.  Every year in a small old mining town in Idaho, about 30 miles from where I live they have the annual chili cookoff.  I was going to try to find just some meat chili and eat just the meat but there were beans in everyone of them.  So I ate it.  Then I had to drink a soda to put out the fire in my stomach and since I figured I'd already blown it I just had to have some gelato.  There's a great little candy store near my house that has the best gelato.  Sorry guys.  I ended up buying a little bit of candy too, gummy coke bottles and a cashew turtle, and then we had to have pizza for dinner.  So now that I got that all out of my system, I'm back.  I do miss these kinds of foods even though they aren't good for me, they just taste so damm good.   Sad

Allergies to grain-fed, even hay-fed (no grains) animals , unless the farm was lying, as well as eggs. I can't tolerate gluten nor casein &lactose (dairy).

In the area I live in, I can't get my hands on 100% grassfed animals. So, I'm sticking to wild fish, avocado and coconut oil. First day went well. My sinuses aren't acting up and my ears are not blocked. A first, in a loooooooong time! But, some bloating, probably due to the increased fiber intake (i.e. avocado). Hopefully, it will pass as I adjust.

Hi Everyone,

I have been lurking at this site since December but have not posted.  I live in  Alberta, Canada.  At the beginning of June I weighed 275 lbs (5 foot three female).  I started KK and by the beginning of October I was down 75 lbs and started to lose my hair.  I quit KK and tried low GI.  Since the end of October I have been eating a low carb, moderate protein and high fat diet.  I lost 10 lbs at first and then stalled for 3 months.  I recently dropped 4 more but stopped losing again.  I decided to start a carnivore plan of meat and eggs only yesterday.  Today was the end of my second day.  My goal is to go do this for 10 straight days.  I would like to jump on the bus and join in on the challenge.  After ten days I plan to add items like cheese, cream, sweetener one at a time to see if any of these are stalling me.  If I start adding in cream first then I will probably be able to count my days for the rest of February,

Valcan, many of us here have found that a very high animal fat diet is the ticket to great health. If your appetite is suppressed, you are definitely not alone. I find I only eat once a day, and not much food at that. Don't worry about it. It's such a good thing you got off the Kimkins! IMO, that is one of the most dangerous eating regimens ever devised! Shock

I like to say "animal fat is where it's at"... cuz, I think the health benefits of that WOE are astounding... and I think that is what we evolved eating. It is so necessary to get that stuff into your body every day. A lot of us also IF, and that seems to be a pretty normal thing for us humans to do. Anyway, these are my thoughts. IMO, it's all about getting rid of carbs and artificial junk, and adopting a high animal fat diet. Too much protein is not a good thing. There are so many knowledgeable folks on this Bus, so feel free to ask whatever questions you have. Hope you have a good trip. Cool

Hi,

Thanks for the welcome!  I have been getting a great education on this site since December.  I have read many of the threads and especially enjoyed Jeff's MAM experiment (Jeff, you are my hero).  I am also working my way through GCBC.  I loved the video of Taubes at Berkeley too.  

This way of eating is becoming a lifestyle, I am through with diets.  I do wish however that the rest of the weight I need to lose would come off.  Having a long stall is very frustrating.  I'm all for it coming off slowly but I think I still have a ways to go yet until I undo the damage I did to my body on KK.  Patience, patience, patience.  Right now as well as committing to meat, eggs and water only for 10 days, I am also calorie cycling to see if that can help me drop the pounds at a more steady rate.  Monday, Wed, Fri and Sunday I eat maintenance level calories.  Tues, Thurs and Sat I am trying to eat at 50% of my maintenance calories.  Tomorrow will be my first low day since starting zero carb.  I am considering making Thursdays "egg only" days.  I think all the experiments at this site inspire me to try a few of my own.  Something is causing me to stall and I don't now what it is so I am eliminating butter, cream, coffee, tea, sweetener and cheese for now.  I don't think I could give them up for too long but ten days seems doable.  In March I plan to add in items slowly, one at a time to see if I can find out what is messing with my weight loss.

I'm off to a great start today - fried ground beef with a couple of eggs scrambled in.  I saw that someone posted this idea on here and decided to  try it this morning.  I forget who's idea this was but whoever you are, thank-you for sharing, it was yummy.  

Does anyone have any suggestions for how to repair my metabolism that I wrecked on KK?  I suspect that it will just take time but any other suggestions would be appreciated.

Too many carbs and/or dairy may stall some people. Remember that eggs do contain carbs (although not much) so best not to overdo it. Just something to consider.

I'm seeing improvement. Blocked ear is much less frequent and only occurs during times of excessive mucus production. Since I probably (the next few days and weeks will reveal the truth) have eliminated the allergen (gluten in grain-fed meat) responsible for excessive mucus production, I only experienced ear blockage when I went outside (cold weather combined with hot=more mucus) and cried  Cry  tonight (suddenly, I've become more emotional). Other than that, no mucus, no ear blockage, especially after eating which sometimes occurred after eating meat products, be it bone marrow or meat itself. I think the reason why ear is blocked when too much mucus is produced is because my eustachian tube remains open when it should close up, due to so much mucus being produced these last few months, the swelling and inflammation. It is referred to as patulous eustachian tube or PET.

I also feel more energetic. Before, I would have bouts of energy sometimes interspersed with moments of fatigue and fogginess. Now, the energy is more constant and i feel tired much later at night.

Not one hive in the last 48 hours whereas before, I would still get the occasional one. But, still too early to say for sure. Eyes much less irritated and watery, especially in bright lights (i.e. neon lights, sunlight) or when windy. Vision much clearer, as occasionally it would get blurry and I attributed this to my contact lenses and/or eye dryness. I feel more focused as well and less agitated overall.

Feel much less dehydrated, especially upon waking up in the morning (i.e. very dry mouth).

I've also had these dark circles under my eyes since increasing meat intake and making it the staple of my diet. A paler complexion making me look somewhat fatigued. My complexion is already improving, a friend noticed. Dark circles still there. I expect the dark circles to improve at about the same rate as ear blockage as both are related to sinuses (glue ear + allergic shiners).

Sleeping although much improved lately was occasionally marked by tingling in arms or legs (lack of magnesium/calcium), difficulty falling back asleep or just waking up during the night many times and anxiety. I've slept incredibly well these last two nights and one thing I noticed was that I can now sleep on my belly, where before, it would hurt my neck area and give me cramps in that area. Weird but it seems have gone away.

I would have acid reflux at times. That is totally gone. And also abdominal cramps with some bloating. That worsened the first day but has also totally gone now. I'm crossing my fingers this will persist.

A little more emotional, breasts are aching (with nipples swelling)...probably due to increasing hormones about a week ago. I don't mind...I actually feel more alive and with that, has come slightly increased sexual desire.

And finally, a slight decrease in appetite.

That's it for now but I'm almost convinced that meat was the culprit. And that things will only get better. It's only been 48 hours.

I'm sure by eating meat and still ingesting gluten,  I did not allow my intestines (i.e. villi) to recover. I believe that before starting out on this path, I had the beginnings of celiac disease. That's probably why I could not tolerate lactose, had low iron levels (despite eating loads of meat, about 700-800 grams daily, especially organ meats, back in August 2007) and have experienced some difficulty digesting fat (gallbladder) when it was too high (cramps and diarrhea). I had many other symptoms before changing my diet from the typical western one. Too many to name here. But one was easy bruising and poor healing which may have been due to malabsorption of vitamins such as A or K. Plenty of that with avocado and fish. Especially with high fat intake.

Even though with an eventual 100% recovery (I'm optimistic) I may tolerate dairy, I don't ever intend to reintroduce in my diet. I just don't wanna take any chances and with everything I've read about casein and its effects on the body...no thank you! But, that's just me. I will also be curious to test my iron levels.

I'll keep you all updated.

La dee da, Dean! Yesterday was a delicious day, with some pepperettes, goat cheese curds (OMG YUM), couple slices organic old cheddar, roasted duck, rendered duck far cracklin', and tea/coffee with heavy cream.

Also a good IF day! I find if I'm out and about (IKEA shopping, I am a hardcore addict, can't help it) then I can easily wait to open my eating window 'til 4 or 5 and then close it at 8 or 9. When I'm at home working, I tend to eat earlier, I think more due to boredom and wanting a break. I always have a couple cups of tea with heavy cream in it in the morning, which helps keep me going til later. I'd like to do a "real" fast, but I just don't like black tea as much.

I am bloating from dairy. *sigh* Too much of it.

Glad you're feeling better Kristelle. You know, I wonder if it's actually gluten in grain-fed meats that bothers you or something else? Amines, etc - Red could jump in here. Some grocery-store meat is treated with stuff to make it appear red in colour, etc. Generally, it's thought that grain-fed meat contains no gluten (it doesn't make it to the muscles). I've no link to studies on this though. Personally I'd suspect something else.

I suspect food chemicals, too. Amines or sulphites (they spray beef with sulphites, often to preserve the colour, as Tracy mentioned), are most likely. We'll see, though. If Kristi improves on the avocado and coconut oil (which is incredibly high in chemicals), then we'll know it's not that! The mucous and ear plugging is what's making me think it's amines, though. And the fact that you were more emotional yesterday is also a sign you're reacting to chemicals. I know I get very emo when I'm reacting. It's a very common symptom.

If this new diet doesn't make you feel 100% better, I'd go back to eating meat, but focus on the freshest meat possible, preferably lamb and ground beef that is unsprayed, no fatty fish and no organ meats and see if that works. Yup

maybe it's the high amt of omega 6, you'd be consuming w commercial meat.  in that case, if the new diet is not right, you could go back to fatty fish and pastured meat. but a lot of peop do well w coconut oil for the cure. good luck.

I should be less deranged in a day or so. We'll see how it goes until then. Right now my diet is comprised of mostly pain killers. Bleh!
