this was originally a meatblall soup with veggies.. I think parmesan cheese would be nice over the top  Heart


Ingredients

1 tsp. Onion Powder or 1 tbs. Instant Minced Onion (maybe a bit more than this)
1 clove garlic, minced
2 tablespoons fat
4 cups water (you can use less if you want the beef broth to be more condensed)
20-24 oz beef broth
1 6-ounce can tomato paste
1/4 cup snipped cilantro or parsley (you could use celery tops instead)
1 teaspoon salt
1/2 teaspoon dried oregano, crushed
1/8 teaspoon pepper
1 pound ground beef

Instructions

In large saucepan cook onion and garlic in hot fat till onion is tender but not brown. Stir in water, broth, and tomato paste. Bring to boiling; Simmer for 5 minutes. Meanwhile combine cilantro or parsley, salt, oregano, and pepper. Add ground beef; mix well. add a bit at a time, breaking it up, to the simmering soup. Return soup to boiling; reduce heat and simmer about 30 minutes or until meat is done.

Yield: 8 to 10 servings
