this recipe comes straight off the bag of coconut flour i ordered from netrition. they say it comes from the book Cooking with Coconut Flour.
when i whipped it up, i was surprised to discover that it was like the best white cake i'd ever tasted.....Honey Nut Muffins: 3 eggs, 2 T melted butter, 2 T coconut or whole milk, 3 T honey, 1/4 t salt, 1/4 t vanilla, 1/4 c sifted coconut flour, 1/4 t baking powder, 1/2 c pecans, chopped. combine wet and dry separately then mix them together. fold in the nuts. bake at 400 for 15 min. ***here are the changes i made: i sweetened w stevia (don't have any honey). you should probably taste for sweetness. i used a pinch of salt, eliminated the nuts altogether. i didn't have muffin tins handy so just put it in a square pan.....here's the deal; this really doesn't make much batter so the cake was very thin. this recipe would have to be increased to make a birthday cake or cup cakes. even doubled it would probably make only 6 cupcakes. it really works well for cake!!

| sorry, i didn't. i think you should taste batter for sweetness, too, since the change to stevia probably made a difference and most of the time i think of muffins as less sweet than cakes. the sweetness also might be just right for the small recipe that it makes. let me know what you think if you try it. |

I am not an experienced cook. So how much Stevia did you use?

another reason to check the sweetenss, kim. i have been using stevia for a long time and just sprinkle it in til it seems right. that may be the reason this recipe came out tasting like cake. but since i have never make the recipe exactly as wtritten, i don't know.
