i havent eaten this in quite some time (since i dont eat veggies and am avoiding nitrates etc as much as possible) but this was one of my very favorite things to eat
1 fine shredded squash (i prefer delicata but any smallish squash will do.. carnival etc)
8-10 sausage links
2 eggs
2 oz. shredded asigo cheese
salt and pepper to taste
basically, cook up the sausage links (id say you could use homemade sausage if you like) and squash.. throw in the eggs and cheese at the end.
it is sweet and savory at the same time.. truly delicious. (i adapted this from a casserole recipe)
it reheats very well but i wouldnt try freezing it

Yum, sounds good. I used to buy spaghetti squash, cook it, shred it and smother it in ground beef, butter and hot sauce. Thanks for another idea, I bet my kids would love it.
