You can make this with or without veggies. Works great with chicken also, as it makes it so juicy!

Take some fat (I use coconut oil as i'll be adding coconut milk). put in a frying pan. Heat up. Add a bunch of chopped onions (optional). Once those get going, add some peeled/deveined/raw shrimp. Once those start getting a little done, add a can of coconut milk (full fat!) and some curry powder (to taste). Cook until warm. Makes the house smell insanely delicious, and tastes pretty damn great too.

I love this with chopped chicken breast, so yum.... I eat it like soup.

Hi,

I noticed that my full fat coconut milk has 4 carbs for 2 oz while the lite stuff only has 1 carb for 2 oz.  Is there any reason not to use the lite stuff?
